Soft Lemon Ricotta Cookies

Citrus season is in full swing, and I must say I'm very happy about it, because I finally decided to buy a bag of Meyer lemons. I've been using them in salad dressing, strawberry lemonade ( I know it's winter, but here in Puebla there are days that don't feel like that at all), and a couple sweet yummy things, you know how I like them.

One of those sweet things were these delicious lemon-ricotta cookies, that have a cloud consistency and a delicious lemon flavor. Its texture is very soft almost like cake, they have a slight ricotta flavor, and the Meyer lemon certainly gives them a rich hint of  tartness. My two big advice would be, refrigerate the dough and use an ice cream scoop to make the balls, if you have one (obviously I don't have one), this is just to make more symmetrical and better looking cookies. Another thing I must say, is that due to these cookies are really moist the glaze tends to get like a syrup with each passing day, but don´t worry this doesn't affect the flavor at all, I just thought you should know it.

These cookies really made me think about springtime, in fact it seems that that's the only thing I can think about lately (besides Valentine's day), you know, fresh flowers, pastel shades, fresh food with light flavors. Anyway, I hope you enjoy these cookies as much as we did!

La temporada de citricos esta en pleno apojeo y debo decir que estoy muy feliz por eso, ya que por fin me animé a comprar limones eureka. Los he estado usando en aderezo, limonada de fresa (ya se que es invierno, pero en Pueblita hay dias en los que no parece) y en cositas dulces, ya saben como me gustan. Una de ellas fueron estas deliciosas galletitas con consistencia de nube y delicioso sabor a limón, su textura es muy suave casi como pastel, tienen un ligero sabor a ricotta que se percibe en pequeños trocitos y el limón eureka les da un toque acidito, pero rico. Mis dos consejos serían refrigerar la masa y usar una cuchara para helado para hacer las bolitas, si tienen (obviamente yo no tengo uno), esto sólo para darles mejor formita. De igual forma debo decirles que debido a su consistencia húmeda el glaze tiende a hacerce jarabito con el paso de los días, pero en realidad esto no afecta para nada el sabor.

Hacer estas galletas me hizo querer que ya llegué la primavera, en realidad creo que es casi en lo único que puedo pensar ultimamente, además de San Valentín, ya saben, flores, colores pastel, comida con sabores más frescos y ligeros. En fin, espero las disfruten mucho!!

Soft Lemon Ricotta Cookies
Adapted from foodnetwork, by Giada De Laurentiis. Makes 22 cookies.

Ingredients
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 stick unsalted butter (1/4 cup), softened
3/4 cups sugar
1 lemon, zested (4 oz. aprox.)
1 1/2 tablespoons Meyer lemon juice
1 eggs
7. 5 ounce whole milk ricotta cheese

Glaze:
3/4 cup powdered sugar
1 1/2 tablespoons Meyer lemon juice
1/2 lemon, zested

Directions
1. In a medium bowl combine dry ingredients, flour, baking powder, and salt, mix with a fork. Set aside.

2. Using an electric mixer beat the butter, sugar,  and lemon zest together, until light and fluffy, about 5 minutes. Add the egg, beating until incorporated. Add the ricotta cheese and lemon juice, beat to combine. Stir in the dry ingredients. Mix the dough until slightly moist and well incorporated.

3. Cover dough tightly with plastic wrap, and chill on the fridge for at least 2 hours.

4. Preheat the oven to 375 degrees F.

5. Line 2 baking sheets with parchment paper. Scoop the dough onto the baking sheets. Bake for 15 minutes, or until slightly golden at the edges. Remove from the oven and let the cookies rest on the baking sheet for about 15 minutes.

6. Meanwhile prepare your glaze: Combine the powdered sugar, lemon juice, and lemon zest in a small bowl and stir until smooth.

7. Once your cookies have cooled a bit, spoon about 1/2-teaspoon of the glaze onto each cookie and gently spread it. Let the glaze harden before serving, about 20 min. Store in an airtight container.Now, let's eat!!

Galletas Suaves de Limón y Ricotta 
Adaptado de foodnetwork, por Giada De Laurentiis. Rinde 22 galletas.

Ingredientes
1 1/4 tazas de harina
1/2 cucharadita de polvo para hornear
1/4 cucharadita de sal
1/2 barra de mantequilla sin sal (1/4 de taza), ablandada
3/4 tazas de azúcar
1 huevo
1 limón eureka, ralladura ( 4 oz aprox.)
1 1/2 cucharadas de jugo de limón eureka
210 grms de queso ricotta de leche entera

Glaseado:
3/4 taza de azúcar glass
1 1/2 cucharadas de jugo de limón eureka
1/2 limón eureka, ralladura

Instrucciones
1. En un tazón mediano combina los ingredientes secos, harina, polvo para hornear y sal, mezcla con un tenedor. Pon a un lado.

2. Con una batidora eléctrica batir la mantequilla, el azúcar y la ralladura de limón juntos, hasta ligero y esponjada, aproximadamente 5 minutos. Añadir el huevo , batiendo hasta que se incorpore. Añade el queso ricotta y el jugo de limón, bate para combinar. Agregua los ingredientes secos. Mezcla hasta que la masa esté ligeramente húmeda y bien incorporada.

3. Cubre la masa con papel plástico y refrigerala durante al menos 2 horas.

4. Precaliente el horno a 375 grados F.

5. Forra 2 bandejas para hornear con papel pergamino/encerado o aluminio. Saca la masa del refrigerador y coloca la masa a cucharadas sobre la bandeja del horno. Hornear durante 15 minutos o hasta que esten ligeramente doradas en los bordes. Retira del horno y deja que las galletas reposen en la bandeja durante unos 15 minutos.

6. Mientras tanto preparar el glaseado: Combina el azúcar glass, jugo de limón y la ralladura de limón en un tazón pequeño y revuelve hasta que esté suave .

7. Una vez que tus galletas se han enfriado un poco, vierte aproximadamente 1/2 cucharadita de glaseado sobre cada galleta y untalo suavemente. Deja que el glaeado seque antes de servir, unos 20 min . Almacene en un recipiente hermético. Ahora,  a comer!

Monthly Favorites {November}

I just really enjoyed watching how the leaves were slowly falling from the trees, during the whole month./Realmente disfruté viendo cómo las hojas caían lentamente de los árboles, durante todo el mes.

Hershey's crem'n'arandano are back for the holiday season, and we've been stuffing with it like there's no tomorrow./ Hershey's crem'n'arandano están de vuelta por la temporada navideña, y nos hemos estado rellenando con si no hubiera mañana.

The holiday season has officially begun at our home. We put the Christmas tree in mid-November(crazy, right?), I'm just too excited for Christmas this year. /La temporada navideña ha comenzado oficialmente en nuestra casa. Pusimos el árbol de Navidad a mediados de noviembre (una locura, ¿no?), es que estoy demasiado emocionada por la Navidad  este año.

We made a Christmas wreath for the front door, and I think is just perfect. Thank you honey!/ Hicimos una corona navideña para la puerta de entrada, y creo que es simplemente perfecta, gracias amor!

I finally got some time off and made my DIY faux fur blanket. It's also pure perfection, and I've been snuggling with it every single day./ Finalmente conseguí algo de tiempo libre e hice mi mantita DIY de piel sintética. También es pura perfección, y me he estado acurrucando con ella todos los días.

My favorite moment of the month was to go with Nadi for a cup of coffee, and just talk. I love her!!/Mi momento favorito del mes fue ir con Nadi por una taza de café, y sólo hablar. Yo la amo!

Favorite song: Arctic Monkeys - Snap Out of It (Acoustic). This song is absolutley amazing, I've listen to the original version, but the acustic version is way better, it has a slightly softer rhythm, and I just simply love that!!/ Esta canción es absolutamente increíble, he escuchado la versión original, pero la versión acústica es mucho mejor, tiene un rítmo un poco más suave, y eso simplemente me encanta!!

Movie of the month: It definitely has to be "The Hunger Games: Catching Fire". I looove this movie, I'll just say I cried when Katniss couldn't say goodbye to her little sister!! that moment was so touching. Leave in the comments which was your favorite scene. / Me encaaaanta esta película, sólo voy a decir que lloré cuando Katniss no pudo despedirse de su hermana pequeña! ese momento fue muy conmovedor. Deja en los comentarios, cual fue tu escena favorita.

We had an awesome month, we put up our christmas decorations, made lots of yummy food, snuggle pretty much every weekend, watched all of our favorite tv series, and made some DIY projects for the holidays, I couldn't be happier. These were my fave things/moments of the month, I'd love to hear yours!!

Tuvimos un mes increíble, pusimos nuestras decoraciones de Navidad, hicimos un muchas cositas ricas de comer, nos acurrucamos casi cada fin de semana, vimos todas nuestras series favoritas, e hicimos algunos proyectos DIY para la temporada navideña, no podría estar más feliz. Monthly Favorites {October}

Sunflower season began./ Inició la temporada de girasoles.

This month was my aunt's birthday party, we made the centerpieces, some decorations, and the cakes, they were choco-banana with caramel frosting, the flavor combination was soooo good. And thanks to this, I discovered a very interesting thing, that I would like to work organizing events or catering./Este mes fue el cumpleaños de mí tía, hicimos los centros de mesa, algunos adornos y los pasteles, que fueron de choco-plátano con cubierta de caramelo, sabían muuuy bien. Y descubrí que me encantaría dedicarme a organizar eventos o banquetes

Drinking fresh tangerine juice throughout the month was the best thing ever./Tomar juguito de mandarina durante todo el mes fue lo mejor.

My halloween/day of the dead inspired nails, very representative colors in both festivities ;)/Mis uñitas inspiradas en halloween/día de muertos, colores muy representativos en ambas festividades ;)

Oh, yeah!! We finally went for a pumpkin spice to starbucks, I was going to ask for a latte, but I ended up having a frappuccino, and it definitely stole my heart./ Oh, siiiiiiiiiii! Por fin pudimos ir a starbucks a probar un pumpkin spice, yo iba por el latte pero terminé con el frappuccino y robó mi corazón.

Our finding of the month was Karma Bagels, these are the best bagels I've ever had, 100% poblanitos./Nuestro descubrimiento del mes fue Karma Bagels, son los mejores que he probado, 100% poblanitos.

I absolutely loved eating hojaldras the whole month, this one is from Pan de Zacatlán./Algo que amé fue comer hojaldras todo el mes, son deliciosas, esta es de Pan de Zacatlán.

Pumpkins arrived almost at the middle of October, and this made me so extreamly happy. This are the biggest pumpkins I've ever seen in real life(not the internet)./Las calabazas llegaron casi a mitad de mes y me hicieron muy feliz. Estas son las calabazas más grandes que he visto en la vida.

And finally my favorite moment of the month was, dressing up for the first time for a Halloween birthday party. He was a pirate and I was a princess, not really I was trying to be the black swan./

Y mi momento favorito, sin dida fue, disfrazarnos por primera vez para una fiesta de cumpleaños de Halloween. Él es un pirata y yo era una princesa, en realidad no, trataba de ser el "cisne negro" :P

It seems that there was no time to watch movies this month, so there's no movie of the month. But, I would love to hear any recommendation for November./Este mes parece que no hubo tiempo de ver películas, así que se las debo, pero se aceptan recomendaciones para este mes.

Instagram Diaries

Third edition of  "Instagram Diaries".....Let's get started!!/ Tercera edición de "Instagram Diaries" 

1. Finally it stopped raining, and that's my view almost every morning!
2. Halloween decorations everywhere <3
3. My attempt at styling my hair into a milkmaid braid, the same tutorial had two hairstyles.
4.  The past weekend, Nadi and I made the centerpieces for my aunt's birthday party, I absolutely loved them!
5. This Sunday, my local grocery store finally had pumpkins in all its versions, you should've seen my face: P
6. It's tangerine season, and I just can think of freshly squeezed tangerine juice.
7. My nails inspired by Halloween/ Day of the Dead  tones <3
8. We finally have Pumpkin Spice latte and frappuccino in Mexico, my idea was to have latte, because I've tried the homemade version, but I ended up with a frappuccino and I loved the flavor, it's perfect!

9. I love this time of  the year because there are hojaldras everywhere, and I always try to taste every hojaldra that crosses my way...

Monthly Favorites {September}

{I adored how my mix and match nails turn out, I took the inspiration from an image I saw on Pinterest./ Me encantó como quedaron mis uñitas, tomé la idea de una imágen que ví en Pinterest.}

I love when people share their monthly favorites because I can get some pretty cool suggestions thanks to this, maybe a great meal, or a new restaurant, a great beauty product, or they talk about a good movie (we looove watching movies), or I can even listen to some really good songs. So, each month I'll share all the things and random moments that made my month incredibly good, from food, fashion, beauty.... you know the drill!! ;)

I know autumn began some days ago, but it seems that I been completely obsessed over autumnal things the whole month, sorry!!

I would love to hear which were your monthly favorites??

Me encanta cuando la gente comparte sus favoritos del mes porque puedo conseguir algunas muy buenas sugerencias gracias a esto, tal vez una buena comida, o un nuevo restaurante, un gran producto de belleza, o hablan de una muy buena película (nos encanta ver películas), o incluso puedo escuchar algunas canciones muy buenas. Así que, cada mes voy a compartir todas las cosas y momentos aleatorios que hicieron mi mes increíblemente bueno, desde comida, moda, belleza...... ustedes ya saben! ;)

Sé el otoño empezó hace unos días, pero parece que he estado completamente obsesionado por cosas otoñales todo el mes, lo siento!

{Since the weather was cloudy and rainy the whole month, I practically lived in these two the whole time./ Como el clima estuvo nublado y lluvioso todo el mes, prácticamente viví en estos dos todo el tiempo.

{I hadn't had a frappuccino in such a long time, I asked for a Cappucino carameli frappé(caramel=autumn), and it was so-so good!!/ No había tomado un frappé en un largo tiempo, pedimos un  Cappucino carameli frappé (caramelo=otoño), y estuvo tan, tan bueno!!}

{I've been extremely obsessed with all apple-cinnamon things, tea, bars, apple pie oatmeal./ He estado muy obsesionada con todas las cosas de manzana-canela, té, barras, apple pie avena.}

{And the funniest moment of the month, has to be when we help Sandy with her photography class a couple days ago, it was extremely funny!/ Y el momento más divertido del mes sin duda es cuando le ayudamos a Sandy en su clase de fotografía, fue muy divertido!!}

Movie of the month: "The internship", I loved it, it was so so funny, and it's the kind of motivational stories that I love, highly recommended!!

Song of the month: This cover of Radioactive - Imagine Dragons (Alexi Blue & Ava Allan - Cover), I seriously looooove this cover, I kept it on replay the whole month!!

Película del mes: "The internship", me encantó, fue tan tan divertida, y es el tipo de historias motivacionales que me encanta, muy recomendable!

Canción del mes: Este cover de Radioactive - Imagine Dragons (Alexi Blue & Ava Allan - Cover), me encantaaaa este cover, lo mantuve en replay todo el mes!

Instagram Diaries

This is the second edition of "Instagram Diaries". Here's the first one, where I talked a little about this kind of post.......Happy Monday!!

1. I love going to Yelao, they have the best ice cream I've ever had. If you are in Puebla, please go and get some ice cream!! ;)

2. I celebrated September 15th with Enrique and his family, for the first time  ♥

3. Thanks a lot to the cinemas that sell half and half popcorn buckets, I love it.

4. A very special breakfast for the first day of autumn, Pumpkin Spice Pancakes, yum!!

5. Rainy days lasted more than 15 days :o

6. Nadi ask me to ombré the tips of her hair, I saw a lot of videos, and it was totally worth it, we loooove how it came out. The videos I liked the most were this and  this.

7. There is nothing better than a homemade Pumpkin Spice latte to start embracing the autumn spirit, I'll share the recipe very soon.

8. The prettiest donut I've ever eaten, and the best part is that it's an special edition to support Daunis

9. I finally finished my tassel garland. I took this video as reference(I'm kind of addicted to Youtube, I know!).

Esta es la segunda edición de "Instagram Diaries", pueden visitar aquí la primera, en la que les comentó porque me parece muy buena idea hacer este tipo de post.....Feliz inicio de semana!!

1. Me encanta ir a Yelao, tienen los helados más ricos que haya probado. Si estan en Puebla definitivamente deben ir por unos ;)

2. Festejando el 15 de septiembre con Enrique y su familia, por primera vez  ♥

3. Me encanta pedir palomitas mitad mantequilla-mitad caramelo. A alguien más le gusta??

4. El primer día de otoño ameritaba unos hotcakes de pumpkin spice.

5. La lluvia siguió y siguió, por más de 15 días :o

6. Nadi me pidió que pintara las puntas de su cabello ombré, vi muchiiiisimos videos y la verdad quedamos super felices con el resultado. Los dos videos en los que me inspiré más fueron este y este.

7. Para entrar en mood otoñal no hay nada mejor que un pumpkin spice latte casero, pronto compartiré la receta.

8. La donita más bonita que he comido en la vida, y lo mejor es que es parte de una edición especial para apoyar a la organización Daunis "Dona por la inclusión"

9. Por fin, después de casi un mes terminé mi guirlanda de "flequitos". Me base en este video de Youtube(si lo sé, soy adicta a Youtube!!)
