Hello again, I feel it's been so long since my last post, but these past two weeks have been crazy. Even though I couldn't work in a post, I was able to make some recipes, and I am very excited to share them with you.

Let's begin with these delicious soft pumpkin cookies with caramel frosting, oh, oh, oh, no words to describe how much I loved them!! These cookies are so soft, had the perfect autumnal flavor, and the frosting is just amazing, it tastes like real caramels, and it definitely gives that extra to the cookies. Also, this is the first time I use brown sugar in a pumpkin recipe, I know, shame on me, but I definitely loved it, and now it has become one of my favorite ingredients, too.  I really think you should make them, and please share your comments with me!!

Hola de nuevo, siento que ha pasado mucho tiempo desde mi último post, pero de verdad estas últimas 2 semanas han sido una locura. No he podido trabajar en posts, pero si que he hecho varias recetitas y estoy muy emocionada por compartirlas con  ustedes.

Comencemos con estas deliciosas galletas de calabaza con glaseado de caramelo, oh, oh, oh, sin palabras, son súper suaves, tienen ese sabor a otoño que ya saben tanto me gusta y el glaseado es más que increible, sabe a caramelitos y sin duda le da un extra a las galletitas. Además, esta es la primera vez que uso azúcar morena en alguna receta de calabaza, ya sé, ni me digan, pero definitivamente la amé y se ha convertido en otro de mis ingredientes favoritos. La receta la tomé de este video y como siempre hice algunos cambios, los invito a que las hagan y me compartan sus comentarios!!

Raspberry Bloom: Soft Pumpkin Cookies with caramel frosting

Soft Pumpkin Cookies with Caramel Glaze
Makes 3 dozen (adapted from this video, original source unknown)

Ingredients
2 3/4 cups all- purpouse flour
1/2 tsp baking powder
1/2 tsp baking soda
1 Tbs ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/2 teaspoon salt
1 cup butter, softened
1/2 cup white sugar
1/2 cup brown sugar
1 cup homemade pumpkin puree
1 egg
1 tsp vanilla extract

For the caramel frosting:
3 Tbs butter
1/4 cup heavy cream
1/2 cup packed brown sugar
1 cup confectioners sugar
1 tsp vanilla extract

Directions
1. Preheat oven to 350 degrees F. Spray cookie sheets with nonstick spray or line them with parchment paper.

2. In a bowl combine flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt, mix with a spoon; set aside.

3. Using a mixer cream butter, white and brown sugar, until the mixture is light and fluffy. Beat in the egg, then add the vanilla and pumpkin puree, beat until creamy.

4. Add dry ingredients to the pumpkin mixture, mix until smooth. Refrigerate the dough 30 min before scooping.

5. Scoop the cookie dough by heaping tablespoons(12 per cookie sheet) onto the prepared cookie sheets and bake for 15 to 20 minutes, or until the cookies are browned around the edges.

6. Meanwhile let's make our frosting, pour brown sugar, heavy cream, and butter into a small saucepan, cook over medium heat stirring constantly, bring to a boil. Turn off the heat, once the mixture is completely cold add  the vanilla, and confectioners sugar, mix until well blended.

7. Remove the cookie sheets from the oven and let the cookies rest for 2 minutes. Frost your cookies while still warm using a knife. Let them cool on a wire rack. And that's it, enjoy your cookies!!!

Galletas de calabaza con Glaseado de Caramelo
Hace 3 docenas (adaptado de este video,  fuente original desconocida )

Ingredientes
2 3/4 tazas de harina
1/2 tsp de polvo para hornear
1/2 tsp de bicarbonato de sodio
1 Tbs de canela en polvo
1/2 tsp de jengibre molido
1/2 tsp de nuez moscada molida
1/4 tsp de clavo de olor molido
1/2 tsp de sal
1 taza de mantequilla, suavizada
1/2 taza de azúcar blanca
1/2 taza de azúcar morena o mascabado
1 taza de puré de calabaza hecho en casa
1 huevo
1 tsp de extracto de vainilla

Para el glaseado de caramelo :
3 Tbs de mantequilla
1/4 taza de crema espesa
1/2 taza de azúcar morena o mascabado
1 taza de azúcar impalpable o glas
1 tsp de extracto de vainilla

Instrucciones
1 . Precalienta el horno a 180 grados C. Rocía las bandejas para hornear con spray antiadherente o coloca papel de pergamino ó encerado.

2 . En un tazón mezcla la harina , el polvo para hornear, el bicarbonato , la canela , la nuez moscada , el jengibre , el clavo y la sal , mezclar con una cuchara y reservar.

3 . Usando una batidora manual o de pie acremar la mantequilla,  azúcar blanca y azúcar morena, hasta que la mezcla esté suave y esponjoso . Agregar el huevo, la vainilla y puré de calabaza , batir hasta que quede cremoso .

4 . Agregue los ingredientes secos a la mezcla de calabaza, mezclar hasta que esté bien incorporado . Refrigera la masa 30 minutos antes de hornear .

5 . Vierte la masa de galletas por cucharadas colmadas ( 12 por bandeja) sobre las bandejas para hornear y hornear durante 15 - 20 minutos, o hasta que las galletas estén doradas en los bordes.

6 . Mientras vamos a hacer nuestro glaseado, colocar la azúcar, crema espesa y mantequilla en una cacerola pequeña, cocina a fuego medio revolviendo constantemente , hasta que hierva . Apagua el fuego , una vez que la mezcla esté completamente fría agregar la vainilla y el azúcar impalpable , mezclar hasta obtener una mezcla homogénea .

7 . Retira las bandejas para hornear del horno y deja reposar las galletas durante 2 minutos. Glasea las galletitas con un cuchillo mientras está tibias . Deja enfriar sobre una rejilla . Y eso es todo , a disfrutar de tus galletas !

This pumpkin spice syrup is one of my favorite recipes to start getting into autumnal mood, is so easy, and it makes your morning coffee extra special. I've just used my syrup for lattes, and they taste amazing, but this year I'm looking forward to make some pumpkin spice frappuccinos, too.

Pumpkin spice coffee flavor became really popular thanks to Starbucks, and I definitely understand why, the taste is amazing, I mean, it captures the autumn essence in a cup of coffee!!(yeah, I'm a bit weird!). The truth is, I've never had the chance to have an original Pumpkin Spice latte from Starbucks, it seems in Mexico we're not huge fans of pumpkin spice flavor in our coffee, last year I try desperately to find one, but nothing. But, I'm hoping finally this year I can have the pleasure to taste this yummy coffee, which was the inspiration for all the homemade versions of this delicious syrup.

If you already had the chance to taste an original latte or frappuccino, I really think you should give it a try to this recipe and let me know what you think??, and if you haven't, I also think you should make it to taste this amazing syrup, well, actually I think everyone should make it, and have it in the fridge ready to be used. Specially into a delicious hot beverage, with that awesome spices smell, for a weekend morning, or windy afternoon, using cozy clothes, just to enjoy this wonderful season!!

Este jarabe de pumpkin spice sin duda es una de mis recetas favoritas para entrar en mood otoñal, es super sencilla y hace que tu café de la mañana tenga un sabor extra especial, sólo lo he probado en lattes y sabe increíble, pero este año espero hacer uno que otro frappuccino en días que el clima lo permita. 

Este sabor para café se puso muy de moda gracias a Starbucks y es muy entendible, ya que sabe delicioso, es como capturar la escencia de otoño en una taza de café(sí, así de rara soy!). En realidad nunca he tenido la oportunidad de probar un pumpkin spice latte de Starbucks ya que al parecer en México somos cero entusiastas del sabor a calabaza en el café, el año pasado lo busqué y lo busqué pero nada, sólo espero que este año si tenga la oportunidad de probar ese cafesito que fue la fuente de inspiración para todas las versiones caseras de este maravilloso jarabito.


Si ustedes ya han tenido la oportunidad de provar ya sea el latte o frappuccino los invito a que hagan esta receta y me digan que tal?? y si no lo han provado también creo que deben hacerla para que vean lo rico que es, en realidad creo que todos deberían hacerlo y tenerlo a dispocision en el refrigerador, y en especial usarlo en esos días o tardes medio frías, en una bebida caliente con el olor delicioso a especias, usando ropita acogedora para simplemente disfrutar de la temporada.

Díganme, ¿Qué hacen cuando ven algo en internet que no está disponible en el lugar donde viven, también hace la versión casera y esperan que el sabor sea similar a lo original?

Raspberry Bloom: Pumpkin Spice Syrup


Pumpkin Spice Syrup
(I discovered this recipe a year ago thanks to a healthy jalapeño, and ever since I've been crazy about it. I adapted  to my taste, though)

Ingredients
3/4 cup granulated sugar
3/4 cup water
2 whole cinnamon sticks
4 whole cloves
7 whole allspice
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 tsp ground ginger
3 Tbs homemade pumpkin puree (you can use canned)
1 tsp vanilla, or 1 whole vanilla bean, split lengthwise

Directions 
1. Combine all the ingredients in a small saucepan and place over medium heat.  Allow the mixture to come to a boil. Reduce the heat to low, and simmer for 10 minutes, stirring occasionally.

2. Remove from the heat and allow the syrup to cool to room temperature. When the syrup is cool, strain into a clean jar through a fine mesh sieve, or pour directly to your storing jar. That's it, now you can make a delicious pumpkin spice latte!!

NOTE: Store in the fridge, where it will keep for up to 2 months.

To make a latte: Actually, I don't have any specific measures as I prepare my coffee in different cups, with different sizes, but these are my approximate proportions for a medium sized cup.

3/4 cup milk (any type of milk)
1/4 cup of espresso, or strong freshly brew coffee, or I've even prepared it with instant coffee.
1 Tbs pumpkin syrup or to taste
I don't add additional sugar, but if you need more sweetness, just add extra sugar to the cup.

This is a great opportunity to make this drink completely to your taste, that's the magic of homemade!

Jarabe Pumpkin Spice
(Descubrí esta receta hace un año gracias a a healthy jalapeño,  y desde entonces he estado obsesionada con ella. Sin embargo, adapté la receta mi gusto)

Ingredientes
3/4 taza de azúcar granulada
3/4 taza de agua
2 ramas de canela chicas
1 cucharadita de canela molida
4 clavos de olor
7 pimientas gordas enteras
1/4 cucharadita de nuez moscada molida
1/2 cucharadita de jengibre molido
3 Tbs de puré de calabaza casero
1 cucharadita de vainilla, o 1 vaina de vainilla, dividida por una incisión longitudinal

Instrucciones
1. Combina todos los ingredientes en una cacerola pequeña y colocala a fuego medio. Revolviendo ocasionalmente, dejar que la mezcla comience a hervir. Reduce la llama a baja y cocina a fuego lento durante 10 minutos, revolviendo ocasionalmente.

2. Retira del fuego y deja que el jarabe enfríe a temperatura ambiente. Cuando el jarabe esté frío, puedes colarlo antes de envasar (para quitar cualquier fibra), o vertirlo directamente a un frasco limpio con tapa. Y listo a disfrutarlo en un pumpkin spice latte!!

NOTA: Guarda el jarabe en el refrigerador, donde se mantendrá durante un máximo de 2 meses.

Para hacer un latte: En realidad no tengo medidas especificas ya que lo hago en tazas con diferentes tamaños, pero estas son mis proporciones aproximadas para una taza mediana. 

3/4 de la taza  de leche (cualquier tipo de leche)
1/4 de la taza de café espresso, o café concentrado de grano, o incluso lo he hecho con café soluble cargado.
1 Tbs de jarabe de calabaza o al gusto
No le agrego azúcar, pero si sienten que de sabor a jarabe esta bien pero le falta dulce, sólo agreguen azúcar adicional a la taza.

Es una muy buena oportunidad para hacer esta bebida totalmente a tu gusto, esa es la mágia de lo casero!!

Today I'd like to share the recipe for what I think is autumn's key ingredient, Pumpkin puree. Ever since I ate my first pumpkin pie this flavor became my absolute favorite for the season, and now I love to make lots of pumpkin pie flavored desserts and lattes. I first knew about this flavor 2 years ago, a few months after I discovered my love for cooking, I  started to see so many pumpkin pie flavored recipes that look so good, that I just really started craving the whole thing, but in Mexico isn't very popular, actually very little people have tasted, I tried to find canned pumpkin as I saw on the recipes, but unfortunately I couldn't find any in my local stores. Obviously, this wasn't going to stop me from getting my pumpkin puree to make all the yummy recipes I wanted to try, so, I decide to make mine from scratch, I've tried different ways to make it, but this recipe is by far my favorite, is very easy, full of flavor and no sugar added, the puree is so good that I could literally take a spoon and eat it all at once. Besides, you can freeze it and it will keep its flavor and texture, on this way you can have pumpkin puree for the whole season. I hope you like it, and I'll be  posting some recipes to use our puree. Hoy quiero compartir una receta que considero básica para la temporada de otoño ya que es la base para varias recetas y bebidas deliciosas. Yo me enteré de la existencia de este rico sabor a "pumpkin pie"(pure de calabaza y especias) hace como 2 años, un poco después de que mi amor por la cocina surgió, encontraba varias recetas con puré de calabaza que se me antojaba hacer, pero aquí en México no es muy popular que digamos y jamás encontré puré enlatado en ninguna de las tiendas de por aquí. Obviamente esto no me iba a detener, así que decidí hacerlo desde cero, he intentado hacerlo de varias formas, pero sin duda esta es la receta que más me gusta, es muy sencilla, no necesita azúcar y se concentra perfecto el sabor a calabaza, incluso podría comer el puré a cucharadas(así de bueno queda). Además, el hecho de que se pueda congelar y que conserve su sabor y textura es increíble porque así tienes provisiones para todo el otoño. Espero que les guste y ya vendrán varias recetas para usar este rico puré. Si lo hacen, les agradecería mucho que me dijeran que les parecio??

Homemade Pumpkin Puree 
Adapted from Unsophisticook

Ingredients:

3 pie pumpkins (my pumpkins weighed about 3 pounds each)
1-11/2 cup water

Instructions: 

1. Wash and thoroughly dry your pumpkins.

2. Slice in half and scoop out the stringy flesh and seeds.

3. Trim the stems off and lay cut side down on a baking sheet. Pour one cup or more of water around the pumpkins and bake at 350 F degrees for approximately one hour, or until the flesh is soft and can be scooped out easily. Let them cool until room temperature.

4. Scoop out pumpkin pulp and place in a large bowl to puree with an immersion blender, blend until reach desired consistency. You could also transfer it in batched to a food processor or blender to puree. I used a blender,  it took me like an hour to puree all my pumpkin flesh, I had to work in small batches and add a bit of water to help the process, it was like 1 1/2 cups of baked pumpkin with 1/4 cup water. Despite the time, the end result was totally worth it.

-My pumpkins yield about 10 cups of pumpkin puree. I froze it in freezer ziploc bags, in batches of 2 cups each.

The puree should keep for up to a year in the freezer, or a week in the fridge.

Notes:
If the pumpkin puree is too thin, you can strain off some of the water by lining a sieve with cheesecloth and transferring the puree to it for about 20 minutes.

Homemade Pumpkin Puree 
(Adapted from Unsophisticook)

Ingredientes
3 pie pumpkins (mis calabazas pesaban alrededor de 1.5 kg cada una)
1-11/2 taza de agua

Instrucciones
1. Lava y seca bien las calabazas.

2. Rebana por la mitad, saca la pulpa fibrosa y las semillas.

3. Recorta los tallos y coloca las mitades hacia abajo sobre una bandeja para hornear. Vierte una taza o más de agua alrededor de las calabazas y hornea a 180 °C durante aproximadamente una hora, o hasta que la carne esté suave y se pueda raspar con facilidad. Deja enfriar hasta temperatura ambiente.

4. Raspa la pulpa de las calabazas y coloca en un tazón grande para hacer puré con una batidora de inmersión, bate hasta que quede una consistencia uniforme. También puedes usar un procesador de alimentos o licuadora. Yo utilicé la licuadora, me tomó como una hora para hacer puré toda mi pulpa de calabaza, tenía que tomar porcines pequeñas y añadir un poco de agua para ayudar a que se licuara, era como 1 1/2 taza de pulpa de calabaza con 1/4 de taza de agua. A pesar de que me tomó algún tiempo, el resultado final vale mucho la pena.

-Obtuve cerca de 10 tazas de puré de mis 3 calabacitas. Y lo congele en bolsas ziploc para congelador, en porciones de 2 tazas por bolsa.

El puré dura hasta un año en el congelador, o una semana en el refrigerador.

Nota:
Si el puré queda muy líquido puede colar un gasa sobre una coladera y transferir el puré a ella durante unos 20 minutos, para drenar un poco de líquido.
