Two years ago I discovered the existence of apple cider, and since then it has become a staple of the autumn season to me, we've use it in pancakes, doughnuts, and a few baked goods, but our favorite way to have some is in apple cider floats, there's something about vanilla ice cream that makes this out of this world. The flavors blend perfectly to make a tasty and cozy treat, that satisfy any sweet craving.

We use our homemade apple cider, that has lots of spices, and we absolutely loved it. This is so easy to make, has very few ingredients, you can serve it warm or cold (I must admit we like it better cold, it enhance the spiced flavor), and make as many servings as you want. I warn you, this is pretty addictive!!

Hace dos años descubrí la existencia de la sidra de manzana estilo americana, y desde entonces se ha convertido en un elemento básico de la temporada de otoño a mí. La hemos utilizado en hotcakes, donas y algunas cosillas horneadas, pero nuestra forma favorita de tomar un poco es en flotantes de sidra de manzana, hay algo acerca del helado de vainilla que lo hacen  fuera de este mundo. Los sabores se mezclan perfectamente para hacer una bebida sabrosa y acogedora, que satisface cualquier antojo dulce.

Utilizamos nuestra sidra de manzana hecha en casa, que tiene muchas especias, y nos encantó. Esto es tan fácil de hacer, tiene muy pocos ingredientes, se puede servir caliente o frío (debo admitir que nos gusta más frío, realza el sabor de las especias), y hacer tantas porciones como quieras. Te lo advierto, esto es bastante adictivo!

Apple cider float 
Adapted from Every day with Rachael Ray. Serves one.

Ingredients
1 cup homemade apple cider
1 cup vanilla ice cream
Caramel sauce, to taste
a pinch of ground nutmeg

Instructions

Warm: 
1. In small saucepan, heat up the cider, as warm as you want.

2. Pour cider into one float glass, mug or jar. Top with ice cream, caramel sauce and a pinch of nutmeg.

3. Serve with spoon.

Cold:
1. Pour chilled apple cider into one float glass, mug or jar. Top with ice cream, caramel sauce and a pinch of nutmeg.

2. Serve cold!

Flotante de Sidra de Manzana
Adaptada de Every day with Rachael Ray. Sirve uno.

Ingredientes
1 taza de  sidra de manzana casera
1 taza de helado de vainilla
salsa de caramelo, al gusto
una pizca de nuez moscada molida

Instrucciones

caliente:
1. En una cacerola pequeña, calienta un poco la sidra.

2. Vierta la sidra en un vaso de vidrio alto, una taza o un tarro. Cubre con helado, salsa de caramelo y una pizca de nuez moscada.

3. Sirva con cuchara.

frío:
1. Vierta la sidra de manzana fría en un vaso de vidrio alto, una taza o un tarro. Cubre con helado, salsa de caramelo y una pizca de nuez moscada.

2. Servir frío!

Pumpkin Spice pancakes are definitely one of my favorite breakfast for autumn, I can eat them for breakfast, as a snack or even at dinner, they're delicious, I just simply love their rich flavor loaded with spices, which make them more than perfect for the season.

These pancakes are the result of several attempts to get my perfect pumpkin pancakes. I saw several recipes, and even tried a couple of them,but I always ended up feeling they lacked something. So, one day I decided to make my own mix, I used my favorite recipe for buttermilk pancakes as the base, which I adapted from williams-sonoma, then add the same amount of spices that I use for my pumpkin pie recipe, and experimented a bit with the amount of puree. I did like how they turn out, but I didn't loved them, so I kept experimenting, and every time I made a batch I tried to improve what I thought it had been to much or to little in the last batch. After several attempts is how I got to the point where I found my perfect mix, these pancakes are super moist and fluffy, smell delicious, the spices are present without being too much, and they leave you a slight pumpkin flavor, which is enhanced perfectly by the maple syrup.

Los hotcakes de calabaza con especias son sin duda uno de mis desayunos favoritos en otoño, puedo comerlos en el desayuno, como snack o en la cena, son deliciosos y tienen un rico saborsito a especias que los hace más que apropiado para este clima. 

Estos hotcakes son el resultado de varios intentos por conseguir mis hotcakes de calabaza perfectos, vi varias recetas, e incluso intenté con dos de ella, pero sentía que les faltaba algo. Un día decidí usar mi receta favorita de buttermilk hotcakes como base, que adapté de williams-sonoma,  agregarle la misma cantidad de especias que le agrego al pie de calabaza y experimentar un poco con la cantidad de puré. Esa vez me gustaron pero no me encantaron, por eso cada vez que los hacia trataba de mejorar lo que no me había agradado tanto de la vez anterior. Después de varios intentos  es como llegué al punto en el que encontré mi mezcla perfecta, estos hotcakes salen super esponjados, huelen delicioso, las especias estan presentes sin ser demasiado y te dejan un sabor ligero a calabaza, que se complementa perfecto con el jarabe de maple. Todos los que los han probado los han amado, incluso los más exigentes, así que espero que ustedes también disfruten de estos deliciosos hotcakes con sabor otoñal, y por favor, no olviden decirme si les gustaron!!

Raspberry Bloom: Pumpkin Spice Pancakes



Pumpkin Spice Pancakes
Makes about 22 small pancakes; serves 5-6.

Ingredients:
2 cups all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground nutmeg
1/4 tsp ground clove
3 Tbs. brown sugar
3 Tbs canola oil (or any oil of your preference)
2 eggs
1 cup homemade pumpkin puree
1 1/2 cups buttermilk
2 tsp. vanilla extract

Plus:
1 to 2 Tbs. butter or nonstick cooking spray for greasing your pan
Maple syrup for serving


Directions
1. Preheat a large skillet on medium heat.

2. Pour all the dry ingredients into a medium sized bowl, minus brown sugar,  flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and clove. Whisk with a fork until well combined.  Set aside.

3. In  a larger bowl pour all the wet ingredients plus the brown sugar, this will help to incorporate sugar faster, oil , eggs, pumpkin puree, buttermilk, and vanilla. Whisk with a fork until smooth and well combined.

4. Pour dry mix over wet mixture, and stir just until the batter is smooth and almost no lumps remain.

5. Grease your skillet very lightly with butter and pour about 1/4 cup of pancake batter. Cook for about 2 min, or until tiny bubbles start showing up around the edges of your pancakes, flip the pancakes and cook 2 minutes more, or until the bottom looks golden brown. Keep warm until all the pancakes are cooked.

6. Serve with maple syrup, and enjoy!!!!

Hotcakes de Calabaza y Especias
Salen aproximadamente 22 hotcakes pequeños, sirve para 5-6 personas .

Ingredientes
2 tazas de harina 
2 cucharaditas de polvo para hornear
1 cucharadita bicarbonato de sodio
1/2 cdta. sal
3 cucharaditas de canela en polvo
1 cucharadita de jengibre molido
1/2 cucharadita de nuez moscada molida
1/4 cucharadita de clavo de olor molido
3 cucharadas  de azúcar morena o mascabado
3 cucharadas de aceite de canola (o cualquier aceite de su preferencia)
2 huevos
1 taza de puré de calabaza casero
1 1/2 tazas de buttermilk, o leche de bulgaros, o 1 1/2 taza de leche + 1 cucharada de jugo de limón sin semilla(del grande), que haya reposado 5 min.
2 cucharaditas de extracto de vainilla

Plus :
1 a 2 cucharadas de mantequilla o aceite en aerosol antiadherente para engrasar el sartén o plancha
Jarabe de maple para servir

Instrucciones
1. Precalienta una sartén grande o plancha a fuego medio.

2. Vierte todos los ingredientes secos en un tazón mediano (menos el azúcar moreno),  harina, polvo para hornear , bicarbonato, sal, canela,  jengibre, nuez moscada y clavo de olor. Batir con un tenedor hasta que estén bien mezclados. Ponlo a un lado .

3. En un tazón grande vierte todos los ingredientes húmedos , más el azúcar moreno , esto le ayudará a incorporar el azúcar más rápido , aceite, huevos, puré de calabaza, buttermilk(o alguna de las otras opciones) y extracto de vainilla. Mezclar hasta que todo este bien incorporado.

4. Vierte la mezcla de ingredientes secos sobre la mezcla de ingredientes húmedos, y revuelve hasta que la masa tenga una consistencia lisa y casi no queden grumos .

5. Engrasa el sartén o plancha muy ligeramente con mantequilla y vierte aproximadamente 1/4 de taza de la mezcla de hotcakes. Cocina por unos 2 minutos o hasta que puedas ver  que pequeños agujeros comienzan a salir alrededor de los bordes de los hotcakes, voltea los hotcakes y cocina 2 minutos más , o hasta que la parte inferior se vea deun tono dorado claro. Mantenlos calientes hasta que estén cocidos todos los hotcakes.

6 . Servir con jarabe de maple, y disfrutalos! !

I hope you all had an excellent weekend, ours was really good, let me sum up the things for you, we had guests, and one of them told me I'm going to be an aunt (Yeah, I'm going to be aunt Diana, yeiiiiiii!!), we also took advantage of "el buen fin"(something similar to black Friday, but sales are not that impressive and lasts the whole weekend) to buy some very needed things, and lastly went to eat to one of my favorite places, Yelao. Pretty much the perfect weekend!!....Now let me tell you what has been going on lately!!

1. I'm super exited because hershey's holiday edition is back, white chocolate and cranberry!!
2. We finally had a Yogen Früz!!
3. I absolutely loved the new fuze tea flavor, white tea and tangerine juice, I wish they sold this all year round. I'll try to make a homemade version very soon!!
4. Fog at 6:00 a.m.
5. This is my first time having Starbucks holiday beverages!!
6. I just love autumn so much!!
7. Pumpkin spice donut, speechless!
8.  
9. The cutest macaron, I think I love pistachio!!

Espero que hayan tenido un excelente fin de semana, el nuestro fue muuuy bueno, voy a resumir las cosas para ustedes, tuvimos visitas y una de ellas me dijó que voy a ser tía (sí, voy a ser tía Diana, yeiiiii!!), también aprovechamos "el buen fin" para comprar algunas cosillas muy necesarias, y por último fuimos a comer a Yelao, ya saben como me encanta. Practicamente el fin de semana perfecto!!.....Ahora dejenme mostrarles lo que ha sucedido últimamamente!!

1. Estoy suuuuper feliz porque ya empezarón a vender la edición navideña de hershey's, crema y arandanos, yum, yum, yum!!
2. Por fin se nos hizo probar un Yogen Früz!!
3. Amé el nuevo sabor de Fuze tea, té blanco con mandarina, ojalá lo vendieran todo el año. Pronto trataré de hacer una versión casera.
4. Niebla al despertar!! :D
5. Primera vez probando bebidas navideñas en Starbucks!!
6. Me encanta el otoño!!
7. Sólo diré, donita pumpkin spice!!
8. 
9. Macaron de pistache, es taaan lindo, y además sabía delicioso.

Hello again, I feel it's been so long since my last post, but these past two weeks have been crazy. Even though I couldn't work in a post, I was able to make some recipes, and I am very excited to share them with you.

Let's begin with these delicious soft pumpkin cookies with caramel frosting, oh, oh, oh, no words to describe how much I loved them!! These cookies are so soft, had the perfect autumnal flavor, and the frosting is just amazing, it tastes like real caramels, and it definitely gives that extra to the cookies. Also, this is the first time I use brown sugar in a pumpkin recipe, I know, shame on me, but I definitely loved it, and now it has become one of my favorite ingredients, too.  I really think you should make them, and please share your comments with me!!

Hola de nuevo, siento que ha pasado mucho tiempo desde mi último post, pero de verdad estas últimas 2 semanas han sido una locura. No he podido trabajar en posts, pero si que he hecho varias recetitas y estoy muy emocionada por compartirlas con  ustedes.

Comencemos con estas deliciosas galletas de calabaza con glaseado de caramelo, oh, oh, oh, sin palabras, son súper suaves, tienen ese sabor a otoño que ya saben tanto me gusta y el glaseado es más que increible, sabe a caramelitos y sin duda le da un extra a las galletitas. Además, esta es la primera vez que uso azúcar morena en alguna receta de calabaza, ya sé, ni me digan, pero definitivamente la amé y se ha convertido en otro de mis ingredientes favoritos. La receta la tomé de este video y como siempre hice algunos cambios, los invito a que las hagan y me compartan sus comentarios!!

Raspberry Bloom: Soft Pumpkin Cookies with caramel frosting

Raspberry Bloom: Soft Pumpkin Cookies with caramel frosting

Soft Pumpkin Cookies with Caramel Glaze
Makes 3 dozen (adapted from this video, original source unknown)

Ingredients
2 3/4 cups all- purpouse flour
1/2 tsp baking powder
1/2 tsp baking soda
1 Tbs ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/2 teaspoon salt
1 cup butter, softened
1/2 cup white sugar
1/2 cup brown sugar
1 cup homemade pumpkin puree
1 egg
1 tsp vanilla extract

For the caramel frosting:
3 Tbs butter
1/4 cup heavy cream
1/2 cup packed brown sugar
1 cup confectioners sugar
1 tsp vanilla extract

Directions
1. Preheat oven to 350 degrees F. Spray cookie sheets with nonstick spray or line them with parchment paper.

2. In a bowl combine flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt, mix with a spoon; set aside.

3. Using a mixer cream butter, white and brown sugar, until the mixture is light and fluffy. Beat in the egg, then add the vanilla and pumpkin puree, beat until creamy.

4. Add dry ingredients to the pumpkin mixture, mix until smooth. Refrigerate the dough 30 min before scooping.

5. Scoop the cookie dough by heaping tablespoons(12 per cookie sheet) onto the prepared cookie sheets and bake for 15 to 20 minutes, or until the cookies are browned around the edges.

6. Meanwhile let's make our frosting, pour brown sugar, heavy cream, and butter into a small saucepan, cook over medium heat stirring constantly, bring to a boil. Turn off the heat, once the mixture is completely cold add  the vanilla, and confectioners sugar, mix until well blended.

7. Remove the cookie sheets from the oven and let the cookies rest for 2 minutes. Frost your cookies while still warm using a knife. Let them cool on a wire rack. And that's it, enjoy your cookies!!!

Galletas de calabaza con Glaseado de Caramelo
Hace 3 docenas (adaptado de este video,  fuente original desconocida )

Ingredientes
2 3/4 tazas de harina
1/2 tsp de polvo para hornear
1/2 tsp de bicarbonato de sodio
1 Tbs de canela en polvo
1/2 tsp de jengibre molido
1/2 tsp de nuez moscada molida
1/4 tsp de clavo de olor molido
1/2 tsp de sal
1 taza de mantequilla, suavizada
1/2 taza de azúcar blanca
1/2 taza de azúcar morena o mascabado
1 taza de puré de calabaza hecho en casa
1 huevo
1 tsp de extracto de vainilla

Para el glaseado de caramelo :
3 Tbs de mantequilla
1/4 taza de crema espesa
1/2 taza de azúcar morena o mascabado
1 taza de azúcar impalpable o glas
1 tsp de extracto de vainilla

Instrucciones
1 . Precalienta el horno a 180 grados C. Rocía las bandejas para hornear con spray antiadherente o coloca papel de pergamino ó encerado.

2 . En un tazón mezcla la harina , el polvo para hornear, el bicarbonato , la canela , la nuez moscada , el jengibre , el clavo y la sal , mezclar con una cuchara y reservar.

3 . Usando una batidora manual o de pie acremar la mantequilla,  azúcar blanca y azúcar morena, hasta que la mezcla esté suave y esponjoso . Agregar el huevo, la vainilla y puré de calabaza , batir hasta que quede cremoso .

4 . Agregue los ingredientes secos a la mezcla de calabaza, mezclar hasta que esté bien incorporado . Refrigera la masa 30 minutos antes de hornear .

5 . Vierte la masa de galletas por cucharadas colmadas ( 12 por bandeja) sobre las bandejas para hornear y hornear durante 15 - 20 minutos, o hasta que las galletas estén doradas en los bordes.

6 . Mientras vamos a hacer nuestro glaseado, colocar la azúcar, crema espesa y mantequilla en una cacerola pequeña, cocina a fuego medio revolviendo constantemente , hasta que hierva . Apagua el fuego , una vez que la mezcla esté completamente fría agregar la vainilla y el azúcar impalpable , mezclar hasta obtener una mezcla homogénea .

7 . Retira las bandejas para hornear del horno y deja reposar las galletas durante 2 minutos. Glasea las galletitas con un cuchillo mientras está tibias . Deja enfriar sobre una rejilla . Y eso es todo , a disfrutar de tus galletas !

Autumn Cravings {fashion}

Besides my so obvious passion/obsession with food, I must admit I looooove all the seasonal trends. I love seeing the seasonal transition in everything, food, clothes, decor, and some other random stuff, so, occasionally I'll share my "seasonal cravings" with you, like fashion, beauty, books, home decor, you know, all those things that you crave, and made very special each season of the year.

I decided to start with fashion, because I'm suuuper obsessed with the colors and textures of the season, this fall I'm particularly excited about round neck sweatshirts and sweaters, shirts, faux leather, boots with cut- outs, and wear sneakers with every single outfit; if we talk about patterns, I'll say plaid, camo, and my always beloved leopard print; and finally in terms of colors, black, emerald, military green/olive green, tan, and all the range of red-purple shades, as maroon, oxblood or burgundy.

Perhaps these aren't the most "it" trends at the moment, but certainly are my favorites, all the items are more casual, and always with the idea of mix and match, to stretch my wardrobe, and especially for the oh so popular layering. Además de todo lo relacionado con la comida debo aceptar que me fascina la moda(y otros) y el cambio de tendencias en cada temporada. Me encanta que la transición también pase al closet y otros artículos en la casa, por lo que de vez en cuando compartiré mis "antojos de temporada" en moda, belleza, libros, home decor, ustedes saben, todas esas cosas con las que sueñas, que hacen diferente y especial cada momento del año.

Decidí iniciar con moda, porque estoy suuuper obsesionada con los colores y las texturas de la temporada, este otoño estoy particularmente entusiasmada por las sudaderas y sweateres de cuello redondo, las camisas, el cuero falso, las botitas con cut-outs y usar sneakers con todo, obvio el estampado de cuadros, el de camuflaje y mi siempre amado estampado de leopardo, y en cuanto a colores, el negro, verde esmeralda, verde militar, color como canela, y toda la gama de tonos rojo-purpura como el marroon, oxblood o borgoña.  

Tal vez no es lo más it de las tendencias actuales pero sin duda son mis favoritos, todos los articulos son más casuales y siempre con la idea de combinarlos y sobre todo hacer uso del famoso layering(prenda sobre prenda). Homemade Apple Cider

This apple cider is completely different to what we know here in Mexico, it doesn't contain alcohol, but is very popular in the United States and Canada in this season of the year, especially for the holidays. At first I must admit I didn't understand very well how it was made, but after seeing it on several blogs, and especially as an ingredient in a lot of autumnal recipes, I got hooked, and I started looking for recipes, tutorials and more information of this delicious drink (the simple idea of ​​apples with spices, it's already a win-win, right???). And again I tried to find some in my local stores, but as always, you know the story, I ended up trying the homemade version.

This recipe was my second attempt at making it, and I must say it's wonderful, it has a fairly thick consistency, it tastes so, so, sooo good, has the perfect amount of spices, and it was really the star ingredient in some recipes we made. I took the recipe from this video, which also served me as a guide, it looked very homemade and therefore convinced me. Is something you definitely should try, and if you ask me what was the best use we gave to this cider, without a doubt, I'd say apple cider floats, a very simple recipe that I also hope to share very soon with all of you. I'd say this recipe and the pumpkin puree have become staples of autumn to me! (yes, that's how much I love it)

Esta sidra de manzana es completamente diferente a la que conocemos aquí en México, no lleva alcohol, pero es muy popular en Estados Unidos y Canadá en esta temporada, sobre todo para los días de fiesta. Al principio debo confesar que no comprendía muy bien cómo estaba hecha, pero después de verla en internet en diferentes blogs y sobre todo como ingrediente de vaaarias recetas otoñales,  llamó mucho mi atención y empecé a buscar recetas, tutoriales y algo más de esta deliciosa bebida (la simple idea de manzana con especias ya es un win-win, cierto???). Nuevamente traté de buscarla en las tiendas locales y como siempre, ya saben la historia, terminé intentando la versión casera.

Esta receta fue mi segundo intento y debo decirles que es maravillosa, tiene una consistencia bastante espesa, sabe tan, tan, taaan rica, tiene la cantidad perfecta de especias y de verdad fue el ingrediente estrella en varias recetas que probamos. Tomé la receta de este video, que además me sirvio mucho como guía, se veía muy casera y por eso me convencio bastante, es algo que definitivamente deben probar, y si me preguntaran cual fue el mejor uso que le dimos a esta sidra, sin duda diría que flotantes de helado de vainilla con sidra de manzana, una receta muy sencilla que también espero poder pronto compartir con ustedes. Sólo se que esta receta y el puré de calabaza, se han convertido en símbolos de otoño para mí!! (sí, así de mucho me encanta)

Homemade Apple Cider
(adapted from this video, In the Kitchen with David)

Ingredients
12 medium sized apples, washed, peeled, and cored (yeah, I know, it sounds like a lot of work, but it's totally worth it!!)
1/2 to 1 cup of sugar, or to taste.
4 cinnamon sticks
6 large cloves
1 Tbs ground nutmeg
4 x 1/4" slices fresh ginger
3/4 tsp whole allspice
1 Tbs maple syrup

Directions
1. Cut apples roughly into quarters, and place in a large stock pot. Add sugar, cinnamon sticks, nutmeg, cloves, ginger, allspice, maple syrup, and cover with water. Bring to a boil uncovered, then cover and reduce the heat to the lowest, simmer for two hours, stirring occasionally.

2. Allow the mixture to cool, and then use a potato masher to mash the apples.Strain the mixture into a bowl, you can use a fine mesh or a cheesecloth, press firmly, or twist to get every last drop of cider. Save the apple flesh, just take off the spices, and you'll have almost 2 cups of flavorful, yummy applesauce.

3. Serve hot, and garnish with a cinnamon stick, or fresh orange slices. Store in an airtight container, keep it in the fridge and reheat as desired.

That's it, I hope you enjoy your cider and applesauce by itself , or into some delicious baked goods!!

NOTE: Feel free to add more sugar or spices to taste.

Ingredientes
12 manzanas medianas, lavadas, peladas y sin corazón (sí, lo sé, suena como un montón de trabajo, pero vale la pena totalmente!)
1/2 a 1 taza de azúcar o al gusto.
4 palitos de canela
6 clavos de olor
1 cucharada de nuez moscada molida
4 x 1/4 "rodajas de jengibre fresco
3/4 tsp de pimienta de Jamaica o pimienta gorda
1 Tbs de jarabe de maple

Instrucciones
1. Cortar las manzanas más o menos en cuartos y colocar en una olla grande. Añadir el azúcar, canela, nuez moscada, clavo de olor, jengibre, pimienta de Jamaica, jarabe de maple y cubrir con agua. Deja que de un hervor sin tapar, luego tapala y baja el fuego al mínimo, cocina a fuego lento durante dos horas, revolviendo ocasionalmente.

2. Dejar que la mezcla se enfríe y luego usar un machacador de papas para hacer puré las manzanas. Cuela la mezcla en un recipiente, puede utilizar un colador de malla fina o una gasa, presiona con fuerza o retuerza, para sacar hasta la última gota de sidra. Guarda la pulpa de manzana, simplemente quita las especias y tendrás casi 2 tazas de un rico y lleno de sabor puré de manzana o salsa de manzana..

3. Servir caliente y decorar con una ramita de canela, o rodajas de naranja fresca. Conservar en un recipiente hermético, guárdalo en el refrigerador y recalentar cuando se te antoje.

Eso es todo, espero que disfruten de su sidra y salsa de manzana así nada más, o en algunos deliciosos postrecitos!

NOTA: Eres libre de añadir más azúcar o especias al gusto.

I love when people share their monthly favorites because I can get some pretty cool suggestions thanks to this, maybe a great meal, or a new restaurant, a great beauty product, or they talk about a good movie (we looove watching movies), or I can even listen to some really good songs. So, each month I'll share all the things and random moments that made my month incredibly good, from food, fashion, beauty.... you know the drill!! ;)

I know autumn began some days ago, but it seems that I been completely obsessed over autumnal things the whole month, sorry!!

Me encanta cuando la gente comparte sus favoritos del mes porque puedo conseguir algunas muy buenas sugerencias gracias a esto, tal vez una buena comida, o un nuevo restaurante, un gran producto de belleza, o hablan de una muy buena película (nos encanta ver películas), o incluso puedo escuchar algunas canciones muy buenas. Así que, cada mes voy a compartir todas las cosas y momentos aleatorios que hicieron mi mes increíblemente bueno, desde comida, moda, belleza...... ustedes ya saben! ;)

Sé el otoño empezó hace unos días, pero parece que he estado completamente obsesionado por cosas otoñales todo el mes, lo siento!

Pumpkin Spice Syrup

This pumpkin spice syrup is one of my favorite recipes to start getting into autumnal mood, is so easy, and it makes your morning coffee extra special. I've just used my syrup for lattes, and they taste amazing, but this year I'm looking forward to make some pumpkin spice frappuccinos, too.

Pumpkin spice coffee flavor became really popular thanks to Starbucks, and I definitely understand why, the taste is amazing, I mean, it captures the autumn essence in a cup of coffee!!(yeah, I'm a bit weird!). The truth is, I've never had the chance to have an original Pumpkin Spice latte from Starbucks, it seems in Mexico we're not huge fans of pumpkin spice flavor in our coffee, last year I try desperately to find one, but nothing. But, I'm hoping finally this year I can have the pleasure to taste this yummy coffee, which was the inspiration for all the homemade versions of this delicious syrup.

If you already had the chance to taste an original latte or frappuccino, I really think you should give it a try to this recipe and let me know what you think??, and if you haven't, I also think you should make it to taste this amazing syrup, well, actually I think everyone should make it, and have it in the fridge ready to be used. Specially into a delicious hot beverage, with that awesome spices smell, for a weekend morning, or windy afternoon, using cozy clothes, just to enjoy this wonderful season!!

Este jarabe de pumpkin spice sin duda es una de mis recetas favoritas para entrar en mood otoñal, es super sencilla y hace que tu café de la mañana tenga un sabor extra especial, sólo lo he probado en lattes y sabe increíble, pero este año espero hacer uno que otro frappuccino en días que el clima lo permita. 

Este sabor para café se puso muy de moda gracias a Starbucks y es muy entendible, ya que sabe delicioso, es como capturar la escencia de otoño en una taza de café(sí, así de rara soy!). En realidad nunca he tenido la oportunidad de probar un pumpkin spice latte de Starbucks ya que al parecer en México somos cero entusiastas del sabor a calabaza en el café, el año pasado lo busqué y lo busqué pero nada, sólo espero que este año si tenga la oportunidad de probar ese cafesito que fue la fuente de inspiración para todas las versiones caseras de este maravilloso jarabito.


Si ustedes ya han tenido la oportunidad de provar ya sea el latte o frappuccino los invito a que hagan esta receta y me digan que tal?? y si no lo han provado también creo que deben hacerla para que vean lo rico que es, en realidad creo que todos deberían hacerlo y tenerlo a dispocision en el refrigerador, y en especial usarlo en esos días o tardes medio frías, en una bebida caliente con el olor delicioso a especias, usando ropita acogedora para simplemente disfrutar de la temporada.

Díganme, ¿Qué hacen cuando ven algo en internet que no está disponible en el lugar donde viven, también hace la versión casera y esperan que el sabor sea similar a lo original?

Raspberry Bloom: Pumpkin Spice Syrup


Pumpkin Spice Syrup
(I discovered this recipe a year ago thanks to a healthy jalapeño, and ever since I've been crazy about it. I adapted  to my taste, though)

Ingredients
3/4 cup granulated sugar
3/4 cup water
2 whole cinnamon sticks
4 whole cloves
7 whole allspice
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 tsp ground ginger
3 Tbs homemade pumpkin puree (you can use canned)
1 tsp vanilla, or 1 whole vanilla bean, split lengthwise

Directions 
1. Combine all the ingredients in a small saucepan and place over medium heat.  Allow the mixture to come to a boil. Reduce the heat to low, and simmer for 10 minutes, stirring occasionally.

2. Remove from the heat and allow the syrup to cool to room temperature. When the syrup is cool, strain into a clean jar through a fine mesh sieve, or pour directly to your storing jar. That's it, now you can make a delicious pumpkin spice latte!!

NOTE: Store in the fridge, where it will keep for up to 2 months.

To make a latte: Actually, I don't have any specific measures as I prepare my coffee in different cups, with different sizes, but these are my approximate proportions for a medium sized cup.

3/4 cup milk (any type of milk)
1/4 cup of espresso, or strong freshly brew coffee, or I've even prepared it with instant coffee.
1 Tbs pumpkin syrup or to taste
I don't add additional sugar, but if you need more sweetness, just add extra sugar to the cup.

This is a great opportunity to make this drink completely to your taste, that's the magic of homemade!

Jarabe Pumpkin Spice
(Descubrí esta receta hace un año gracias a a healthy jalapeño,  y desde entonces he estado obsesionada con ella. Sin embargo, adapté la receta mi gusto)

Ingredientes
3/4 taza de azúcar granulada
3/4 taza de agua
2 ramas de canela chicas
1 cucharadita de canela molida
4 clavos de olor
7 pimientas gordas enteras
1/4 cucharadita de nuez moscada molida
1/2 cucharadita de jengibre molido
3 Tbs de puré de calabaza casero
1 cucharadita de vainilla, o 1 vaina de vainilla, dividida por una incisión longitudinal

Instrucciones
1. Combina todos los ingredientes en una cacerola pequeña y colocala a fuego medio. Revolviendo ocasionalmente, dejar que la mezcla comience a hervir. Reduce la llama a baja y cocina a fuego lento durante 10 minutos, revolviendo ocasionalmente.

2. Retira del fuego y deja que el jarabe enfríe a temperatura ambiente. Cuando el jarabe esté frío, puedes colarlo antes de envasar (para quitar cualquier fibra), o vertirlo directamente a un frasco limpio con tapa. Y listo a disfrutarlo en un pumpkin spice latte!!

NOTA: Guarda el jarabe en el refrigerador, donde se mantendrá durante un máximo de 2 meses.

Para hacer un latte: En realidad no tengo medidas especificas ya que lo hago en tazas con diferentes tamaños, pero estas son mis proporciones aproximadas para una taza mediana. 

3/4 de la taza  de leche (cualquier tipo de leche)
1/4 de la taza de café espresso, o café concentrado de grano, o incluso lo he hecho con café soluble cargado.
1 Tbs de jarabe de calabaza o al gusto
No le agrego azúcar, pero si sienten que de sabor a jarabe esta bien pero le falta dulce, sólo agreguen azúcar adicional a la taza.

Es una muy buena oportunidad para hacer esta bebida totalmente a tu gusto, esa es la mágia de lo casero!!

Instagram Diaries

This is the second edition of "Instagram Diaries". Here's the first one, where I talked a little about this kind of post.......Happy Monday!!

1. I love going to Yelao, they have the best ice cream I've ever had. If you are in Puebla, please go and get some ice cream!! ;)

2. I celebrated September 15th with Enrique and his family, for the first time  

3. Thanks a lot to the cinemas that sell half and half popcorn buckets, I love it.

4. A very special breakfast for the first day of autumn, Pumpkin Spice Pancakes, yum!!

5. Rainy days lasted more than 15 days :o

6. Nadi ask me to ombré the tips of her hair, I saw a lot of videos, and it was totally worth it, we loooove how it came out. The videos I liked the most were this and  this.

7. There is nothing better than a homemade Pumpkin Spice latte to start embracing the autumn spirit, I'll share the recipe very soon.

8. The prettiest donut I've ever eaten, and the best part is that it's an special edition to support Daunis

9. I finally finished my tassel garland. I took this video as reference(I'm kind of addicted to Youtube, I know!).

Esta es la segunda edición de "Instagram Diaries", pueden visitar aquí la primera, en la que les comentó porque me parece muy buena idea hacer este tipo de post.....Feliz inicio de semana!!

1. Me encanta ir a Yelao, tienen los helados más ricos que haya probado. Si estan en Puebla definitivamente deben ir por unos ;)

2. Festejando el 15 de septiembre con Enrique y su familia, por primera vez  

3. Me encanta pedir palomitas mitad mantequilla-mitad caramelo. A alguien más le gusta??

4. El primer día de otoño ameritaba unos hotcakes de pumpkin spice.

5. La lluvia siguió y siguió, por más de 15 días :o

6. Nadi me pidió que pintara las puntas de su cabello ombré, vi muchiiiisimos videos y la verdad quedamos super felices con el resultado. Los dos videos en los que me inspiré más fueron este y este.

7. Para entrar en mood otoñal no hay nada mejor que un pumpkin spice latte casero, pronto compartiré la receta.

8. La donita más bonita que he comido en la vida, y lo mejor es que es parte de una edición especial para apoyar a la organización Daunis "Dona por la inclusión"

9. Por fin, después de casi un mes terminé mi guirlanda de "flequitos". Me base en este video de Youtube(si lo sé, soy adicta a Youtube!!)

Autumn Cravings

I really, really love autumn, the shades, falling leaves, caramel in everything, the smell and flavor of pumpkin spice and apple-cinnamon, spices, the weather gets a bit chilly and windy, and please don't make me talk about clothes.  I would say that is one of my favorite seasons, but it seems I love pretty much every season and I get excited about different things each time, so, I just thought it would be nice to share with you some of the things I'm really looking forward this autumn. Let's get started!!

1. I hope this year I can finally put my hands into some candy corn, ever since I saw those cute festive candies I've been craving them like crazy.

2. I'm really exited about watching new chapters of my favorite series, The vampire diaries, The big bang theory, The Carrie diaries, and I'm even thinking to start watching Teen wolf or some others. I would love  to hear any recommendation!!

3. This Halloween we plan to get/make costumes(we've never done it before!!), and go party!!

4. I love candles, and I really want a smell that screams autumn all over the place, so, I'll try to make my own. If I succeed, I'll share it with you ;)

5. I want to add some festive decors to my room to make it feel more cozy(like painted pumpkins, a papel picado garland, some fake leafs, etc...).

6. Drinking hot tea all day, with or without milk.
7. Drink or eat as much apple cider and pumpkin pie flavored goodies.

8. I'm a huge caramel fan, so, I can't stop thinking about soft candy, caramel apples, caramel frosting for spiced cakes, caramel frappuccino or latte, I would say drizzling caramel into pretty much everything. I've never done the homemade version, but we'll see, I might give it a try this year ;)

9. I loooove pie, and I just can't wait to make some seasonal flavors, apple pie, pumpkin pie, sweet potato pie, pecan pie, all topped either with vanilla ice cream or whipped cream, you know the drill!!

10. And obviously I couldn't be more exited about wearing cozy clothes, and cuddle next to my love!!


This is my top 10,  I would love to hear -What get you excited this autumn?

Yo realmente amooooo el otoño, los colores, las hojas que caen, caramelo en todo, el sabor y olor de pumpkin spice y manzana-canela, el clima es un poco frío y ventoso, y por favor no me hagan hablar de ropa. Diría que es una de mis estaciones favoritas, pero parece que me encanta casi cada temporada y me emociono acerca de cosas diferentes cada vez, así que, creí que sería bueno compartir con ustedes algunas de las cosas que estoy esperando con demasiado interés este otoño. Comencemos!

1. Espero que este año por fin pueda poner mis manitas en un poco de candy corn, desde que vi esos lindos y festivo dulcesitos los he estado deseando como loca. Si alguien sabe donde puedo conseguirlo en Puebla les agradecería mucho me dijeran.

2. Estoy muy entusiasmados por ver nuevos capítulos de mis series favoritas, The Vampire Diaries, The Big Bang Theory, The Carrie Diaries, e incluso estoy pensando en empezar a ver Teen Wolf o algunas otras. Me encantaría escuchar cualquier recomendación!

3. Este Halloween planeamos conseguir/hacer disfraces (nunca nos hemos disfrazado antes!), e ir de fiesta!

4. Me encantan las velas, y realmente quiero un olor que grite otoño por todo el lugar, así que voy a tratar de hacer mis propias velas aromáticas. Si tengo éxito, lo voy a compartir con ustedes;)

5. Quiero añadir algunas decoraciones festivas a mi habitación para hacer que se sienta más acogedora (como calabazas pintadas, una guirnalda de papel picado, hojas falsas, etc ..).

6. Beber té caliente todo el día, con o sin leche.

7. Beber o comer tantos postres/desayunos con sabor a sidra de manzana y pumpkin spice como me sea posible

8. Soy gran fan del caramelo, así que, no puedo dejar de pensar en caramelos blandos, manzanas cubiertas con caramelo, frosting de caramelo para pasteles con especias, caramel Frappuccino o latte, yo diría que poner caramelo en casi todo. Nunca he hecho la versión hecha en casa, pero ya veremos, podría darle una oportunidad este año;)

9. Yo amooooo  el pie, y no puedo esperar para hacer algunos sabores de temporada, pie de manzana, pie de calabaza, pie de camote, pie de nuez, todos acompañados con helado de vainilla o crema batida, ustedes ya saben!

10. Y obviamente no podría estar más entusiasmada por usar ropa acogedora y acurrucarme al lado de mi amor!

Fresh Tomato Soup

This soup is perfect for when the weather starts to cool down, and you want to eat something hot and savory to warm you up, but you don't want to spend a lot of time in the kitchen. This recipe is very easy, it has a lot of fiber which makes it very nutritious(due to the tomatoes keep their skin and seeds), and has a lot of texture. I know that not everyone likes a soup with fiber, but, I mean you need to see the bright side, thanks to this there's no need to add flour to make it thicker, and fiber is really good for your body. I'm really sure you're gonna love this recipe, the soup tastes delicious, the yogurt/sour cream adds that rich creamy texture, and to complement the flavor there is nothing better than some cheddar sandwiches. It's definitely a perfect recipe for a chilly autumn afternoon! ;)

In Mexico we are lucky enough to have tomatoes at an affordable price pretty much all year round, but if where you live is not tomato season any more, you can definitely use canned tomatoes, just add the equivalent in pounds, and go ahead with the recipe. Remember that the fun part about cooking is experimenting and make every recipe your own. If you have any comments I would looooove to hear them......Happy Monday!!  

Esta sopa es perfecta para cuando el clima esta un poquito frío y se te antoja algo calientito para comer, pero no tienes ganas de hacer tantas cosas. La receta es muy sencilla ya que lleva el jitomate con piel y semillas, es super nutritiva por toda la fibra que lleva y esto a su vez le da mucha textura, se que esta consistencia a veces no le agrada a todos, pero hay que verlo por el lado bueno ya que  no necesita harina para estar espesita y además la fibra es buenísima para el organismo. Es una receta que sin duda deben tratar de hacer en una tardesita de otoño y estoy segura que la van a disfrutar mucho, la sopa queda deliciosa, la crema o yogur le da ese toque cremosito y los sandwichitos de queso cheddar complementan perfecto el sabor de la sopa.

En México tenemos la suerte de que el jitomate fresco tiene un precio accesible casi todo el año, pero si en el lugar donde vives no abunda el jitomate fresco o es más accesible comprarlo en lata, puedes hacer la recta y sólo agregar el equivalente en peso. Recuerden que lo divertido de cocinar es experimentar y siempre agregar tu toque personal. Si tienen algún comentario me encantaría escucharlo...........Buen inicio de semana!!

Raspberry Bloom: Fresh Tomato Soup


Fresh Tomato Soup 
adapted from My recipes

Ingredients
2 cups chicken broth

1/2 Tbs olive oil
1/2 large onion, chopped
3 garlic cloves, roughly chopped
2-1 1/2 celery stalks, chopped
1/2 Tbs thinly sliced fresh basil
1 Tbs tomato paste (if you have it on hand)
2 pounds tomatoes, cut into wedges
3/4 tsp salt or to taste
1/4 tsp freshly ground black pepper or to taste
1/4 tsp paprika

For topping:
6 tablespoons plain low-fat yogurt or sour cream
Thinly sliced fresh basil to taste (optional)

Serve with:
Cheddar cheese sandwiches. I used Joseph farms cheddar cheese, you can use any bread you like, and the amount of sandwiches is up to you.

Directions
1. Heat olive oil in a large saucepan, saute onion and garlic until tender, then add tomatoes, celery and basil, saute for about 5 minutes, add chicken broth, bring to a boil covered.

2. Reduce heat, and simmer 30 minutes uncovered. Let it cool for 10 min.

3.  Place half of tomato mixture in a blender, place a clean towel over opening in blender lid (to avoid splatters), blend until smooth. Pour into a large bowl. Repeat procedure with remaining tomato mixture.

4. Return the mixture to the saucepan, add salt, pepper, and paprika, bring to a boil.

5. Serve hot,  top each serving with 1 tablespoon yogurt or sour cream, sprinkle fresh basil to taste(optional), and add some cheddar cheese sandwiches.

Note:
-I added 2 celery stalks, it had a strong flavor, so,  if you do not like celery that much I recommend reducing the amount.

Sopa de tomate 
adapted from My recipes

Ingredientes
2 tazas de caldo de pollo
1/2 Tbs de aceite de oliva
1/2 cebolla grande, picada
3 dientes de ajo, picados toscamente
2 a 1 1 / 2 tallos de apio, picados
1/2 Tbs de albahaca fresca cortada en tiras finas
1 Tbs de pasta de tomate (si lo tienes en la mano)
900 grm de jitomates, cortados en gajos
3/4 tsp de sal o al gusto
1/4 tsp de pimienta negra recién molida o al gusto
1/4 tsp de pimentón o paprika

Para el topping:
6 cucharadas de yogur natural bajo en grasa o crema agria
Albahaca fresca en rodajas finas al gusto (opcional)

Para acompañar:
Sandwiches de queso cheddar. Yo usé queso cheddar joseph farms y pan de caja, puede ser pan de tú elección y la cantidad de sandwiches también es a tú gusto. 

Instrucciones
1. Calienta el aceite de oliva en una cacerola grande, saltea la cebolla y el ajo hasta que estén dorados, añadir los tomates, el apio y la albahaca, saltea durante unos 5 minutos, añadir el caldo de pollo, colocar la tapa y dejar que suelte el hervor.

2. Reduce el fuego y cocina a fuego lento 30 minutos, sin la tapa. Dejar enfriar durante 10 min.

3. Coloca la mitad de la mezcla de tomate en una licuadora, cubre la  abertura de la tapa de la licuadora con una toalla limpia (para evitar salpicaduras), licua hasta que tenga consistencia líquida. Vierte la mezcla en un tazón grande. Repite el procedimiento con la mezcla de tomate restante.

4. Regresa la mezcla a la cacerola, agregar sal, pimienta y pimentón, llevar a ebullición.

5. Servir caliente, y encima de cada porción agrega 1 cucharada de yogur o crema  y esparce albahaca fresca al gusto (opcional).

Notas:
-Yo agregué 2 tallos de apio, sabía bastantante, si a tí no te gusta tanto el apio te recomiendo reducir la cantidad.

Today I'd like to share the recipe for what I think is autumn's key ingredient, Pumpkin puree. Ever since I ate my first pumpkin pie this flavor became my absolute favorite for the season, and now I love to make lots of pumpkin pie flavored desserts and lattes. I first knew about this flavor 2 years ago, a few months after I discovered my love for cooking, I  started to see so many pumpkin pie flavored recipes that look so good, that I just really started craving the whole thing, but in Mexico isn't very popular, actually very little people have tasted, I tried to find canned pumpkin as I saw on the recipes, but unfortunately I couldn't find any in my local stores. Obviously, this wasn't going to stop me from getting my pumpkin puree to make all the yummy recipes I wanted to try, so, I decide to make mine from scratch, I've tried different ways to make it, but this recipe is by far my favorite, is very easy, full of flavor and no sugar added, the puree is so good that I could literally take a spoon and eat it all at once. Besides, you can freeze it and it will keep its flavor and texture, on this way you can have pumpkin puree for the whole season. I hope you like it, and I'll be  posting some recipes to use our puree. Hoy quiero compartir una receta que considero básica para la temporada de otoño ya que es la base para varias recetas y bebidas deliciosas. Yo me enteré de la existencia de este rico sabor a "pumpkin pie"(pure de calabaza y especias) hace como 2 años, un poco después de que mi amor por la cocina surgió, encontraba varias recetas con puré de calabaza que se me antojaba hacer, pero aquí en México no es muy popular que digamos y jamás encontré puré enlatado en ninguna de las tiendas de por aquí. Obviamente esto no me iba a detener, así que decidí hacerlo desde cero, he intentado hacerlo de varias formas, pero sin duda esta es la receta que más me gusta, es muy sencilla, no necesita azúcar y se concentra perfecto el sabor a calabaza, incluso podría comer el puré a cucharadas(así de bueno queda). Además, el hecho de que se pueda congelar y que conserve su sabor y textura es increíble porque así tienes provisiones para todo el otoño. Espero que les guste y ya vendrán varias recetas para usar este rico puré. Si lo hacen, les agradecería mucho que me dijeran que les parecio??

Homemade Pumpkin Puree 
Adapted from Unsophisticook

Ingredients:

3 pie pumpkins (my pumpkins weighed about 3 pounds each)
1-11/2 cup water

Instructions: 

1. Wash and thoroughly dry your pumpkins.

2. Slice in half and scoop out the stringy flesh and seeds.

3. Trim the stems off and lay cut side down on a baking sheet. Pour one cup or more of water around the pumpkins and bake at 350 F degrees for approximately one hour, or until the flesh is soft and can be scooped out easily. Let them cool until room temperature.

4. Scoop out pumpkin pulp and place in a large bowl to puree with an immersion blender, blend until reach desired consistency. You could also transfer it in batched to a food processor or blender to puree. I used a blender,  it took me like an hour to puree all my pumpkin flesh, I had to work in small batches and add a bit of water to help the process, it was like 1 1/2 cups of baked pumpkin with 1/4 cup water. Despite the time, the end result was totally worth it.

-My pumpkins yield about 10 cups of pumpkin puree. I froze it in freezer ziploc bags, in batches of 2 cups each.

The puree should keep for up to a year in the freezer, or a week in the fridge.

Notes:
If the pumpkin puree is too thin, you can strain off some of the water by lining a sieve with cheesecloth and transferring the puree to it for about 20 minutes.

Homemade Pumpkin Puree

Ingredientes
3 pie pumpkins (mis calabazas pesaban alrededor de 1.5 kg cada una)
1-11/2 taza de agua

Instrucciones
1. Lava y seca bien las calabazas.

2. Rebana por la mitad, saca la pulpa fibrosa y las semillas.

3. Recorta los tallos y coloca las mitades hacia abajo sobre una bandeja para hornear. Vierte una taza o más de agua alrededor de las calabazas y hornea a 180 °C durante aproximadamente una hora, o hasta que la carne esté suave y se pueda raspar con facilidad. Deja enfriar hasta temperatura ambiente.

4. Raspa la pulpa de las calabazas y coloca en un tazón grande para hacer puré con una batidora de inmersión, bate hasta que quede una consistencia uniforme. También puedes usar un procesador de alimentos o licuadora. Yo utilicé la licuadora, me tomó como una hora para hacer puré toda mi pulpa de calabaza, tenía que tomar porcines pequeñas y añadir un poco de agua para ayudar a que se licuara, era como 1 1/2 taza de pulpa de calabaza con 1/4 de taza de agua. A pesar de que me tomó algún tiempo, el resultado final vale mucho la pena.

-Obtuve cerca de 10 tazas de puré de mis 3 calabacitas. Y lo congele en bolsas ziploc para congelador, en porciones de 2 tazas por bolsa.

El puré dura hasta un año en el congelador, o una semana en el refrigerador.

Nota:
Si el puré queda muy líquido puede colar un gasa sobre una coladera y transferir el puré a ella durante unos 20 minutos, para drenar un poco de líquido.

Last week, pears were "on sale" on my local grocery store, so obviously we went crazy and bought all the pears we found, well, actually there were just three types of pears, but for me that's a lot due to I had only ate D'anjou pears. The thing is since that day I couldn't stop thinking about pear muffins (oh yeah!), so, on Saturday I started looking for a recipe, I wanted that my muffins had an autumn essence (a bit obsessed with autumn, I know), fortunately I found a recipe for spiced pear muffins. I had to make some changes to the original recipe to make it fit more to my taste, and I think it was a great idea I really loved how they turn out, the muffins were super moist, full of flavor, and the whole wheat flour definitely made them tastier. You should totally try this recipe, is so easy, the ingredients make these muffins a great breakfast for the upcoming season, and they're also very nutritious. Hace algunos días en el super las peras estuvieron a precio especial y obviamente enloquecimos, compramos de todas las peras que encontramos, bueno sólo había de tres tipos, que para mí son demasiadas porque sólo había probado las d'anjou. El caso es que desde ese día no dejé de pensar en muffins de pera, así que el sábado empecé a buscar una receta que tuviera sabor otoñal, por suerte encontré una que tenía especias y la tomé como inspiración, la modifiqué un poco y el resultado fue muy satisfactorio. Los muffins quedaron esponjosos, llenos de sabor y la harina integral los hizo aún más especiales. Es una receta muy sencilla, los ingredientes la hacen un perfecto desayuno para la temporada venidera y además es suuuper nutritiva. Espero les guste y por favor diganme como les quedaron!!

Spiced Pear Muffins
(adapted from The kitchn)
Makes 15 (cupcake sized) yummy muffins

Ingredients
1 cup all-purpose flour
1 cup whole wheat flour
2 tsp baking powder
1/2 tsp salt
1/2 cup sugar
2 cups pear cored and chopped, skins on (I used D'anjou)
3/4 cup buttermilk
2 eggs
1 stick melted butter
1 tsp vanilla extract
2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg

For topping:
1/4 cup sugar
1/2 Tbs ground cinnamon

Directions
1. Preheat oven to 400 degrees F.; line the cupcake pan with paper liners.

2. In a large bowl, whisk both types of flour, baking powder, salt, sugar, and all the spices together; set aside.

3. In another bowl mix all the wet ingredients, eggs, melted butter, buttermilk, and vanilla extract. Use a fork to blend the mixture.

4. Add the dry ingredients to the liquid mixture and gently stir with a rubber spatula until just blended. Fold in the diced pears and mix gently.

5. Mix the extra sugar and cinnamon for the topping, set aside

5. Spoon the batter into the lined muffin(cupcake) cups. Sprinkle the topping sugar over the tops of the muffins, this will make them even tastier. Bake for 20-25 minutes, or until the tops spring back when lightly touched, or when a toothpick inserted in the middle of one of the muffins comes out clean.

7. Let them cool for 5 minutes, and then remove the muffins from the pan and cool on a wire rack, or you can skip the cooling and eat them warm, they were amazing!!

Muffins de Pera y Especias

Hace 15 deliciosos muffins de tamaño cupcake

Ingredientes
1 taza de harina
1 taza de harina integral
2 cucharaditas de polvo para hornear
1/2 cucharadita de sal
1/2 taza de azúcar
2 tazas de pera con piel, sin corazón y picada (en esta receta usé pera D'anjou)
3/4 taza de buttermilk (ver notas)
2 huevos
1 barra de mantequilla derretida
1 cucharadita de extracto de vainilla
2 cucharadita de canela en polvo
1/2 cucharadita de jengibre molido
1/4 cucharadita de nuez moscada molida

Para el topping:
1/4 taza de azúcar
1/2 cucharada de canela en polvo

NOTA: En México es muy difícil encontrar buttermilk, pero se puede obtener una consistencia similar si a 1 taza menos 1 Tbs de leche le agregas 1 Tbs de jugo de limón.

Instrucciones
1. Precalienta el horno a 200 grados C., coloca capacillos en un molde para cupcakes.

2. En un tazón grande, mezcla las dos tazas de harina, el polvo para hornear, sal, azúcar y especias, póngalos aparte.

3. En otro recipiente mezclar todos los ingredientes líquidos,  leche, huevos, mantequilla derretida, buttermilk y extracto de vainilla. Use un tenedor para batir la mezcla.

4. Agregue los ingredientes secos a la mezcla de líquido y revuelva suavemente con una espátula de goma hasta que estén mezclados. Agrega las peras en cubitos y mezclar suavemente.

5. Mezclar el azúcar y canela extra para el topping, póngalo aparte.

5. Vierta la mezcla de forma equitativa en los moldes con capacillo. Espolvorear la mezcla de azúcar-canela sobre la parte superior de la mezcla, esto los hará aún más sabroso. Hornear durante 20-25 minutos, o hasta que la parte superior regrese cuando se toca ligeramente, o cuando al insertar un palillo en el centro salga limpio.

7. Deje que se enfríen durante 5 minutos y luego retire los muffins del molde, dejar enfriar sobre una rejilla , o puedes saltarte este paso y comerlos calientitos, saben increíbles!

As I told you in my first post breakfast is my favorite meal of the day, when I'm in school I try to make more on-the-go meals that can keep me satisfied for a while, the last days have been so chilly in Puebla, I mean you can already feel the autumn mood, so I start craving warm, sweet, yummy food(always!!) in the morning, one of my favorite recipes to satisfy this craving is this amazing apple pie oatmeal, which is super easy to put together, it takes you like 5 minutes or so to make it, is very nutritious and OMG! it's like fall on a plate. You should give it a try, and please let me know what you think. Como ya lo había mencionado antes el desayuno es mi comida favorita del día, cuando es temporada de escuela trato de hacer cosas que no me tomen mucho tiempo pero que de alguna forma me mantengan satisfecha, en los últimos días ha hecho mucho frío en Puebla y ya se empieza a sentir el ambiente otoñal, esto quiere decir que se me antoja desayunar algo calientito y dulcesito(cuando no!), una de mis recetas favoritas es esta deliciosa avena con sabor a pie de manzana, es super sencilla te toma como 5 minutos hacerla, es muy nutritiva y OMG! es como otoño en un plato. De verdad los invito a probarla y no olviden decirme que les parecio. Feliz inicio de semana!!

 Apple Pie Oatmeal

Serves one, but you can easily increase the amount of ingredients to fit your needs.

Ingredients
1 apple(My fave is red delicious), cored and chopped (skins on)
1 cup water
1/2 cup quick cooking oats
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg

To serve:
Milk of your preference (regular milk, soy milk, almond milt, etc.)
Sugar for sprinkling on top or to taste

Directions
1. Bring the water to a boil in a small saucepan.

2. Then add the oats, cinnamon, nutmeg, and apple, all at once. The heat gets adjusted to low and the oatmeal is simmered for 3-5 minutes, stir twice or more as needed.

3. Serve it with a splash of milk and a little or a lot of sugar on top.

That's it, you have a great breakfast to start your day!!

Avena Pie de Manzana

1 porción, pero usted puede aumentar fácilmente la cantidad de ingredientes para satisfacer sus necesidades.

Ingredientes
1 manzana (mi favorita es red delicious),  sin corazón, picada y con la piel.
1 taza de agua
1/2 taza de avena de cocción rápida
1/2 cucharadita de canela en polvo
1/4 cucharadita de nuez moscada molida

Para servir:
Leche de su preferencia (leche de vaca, leche de soya, leche de almendra, etc)
Azúcar para espolvorear en la parte superior o al gusto

instrucciones
1. Calentar el agua en una cacerola pequeña hasta que empiece a hervir.

2. Después, añadir la avena, canela, nuez moscada y manzana, todo a la vez. Ajustar el calor a lo más bajo, la avena se cuece a fuego lento durante 3-5 minutos, revuelva dos veces o más como sea necesario.

3. Servir con un poco de leche y un poco o mucha azúcar por encima.

¡¡Eso es todo, ustedes tiene un gran desayuno para empezar el día!
