Onion Soup

This has been such a looong week, I've been extremely busy with school, I'm already counting the days to finish with all of it, I just want to rest and have lots of free time to do the things I really want to do. In fact it's a little embarrassing, but I've been trying to post this delicious onion soup all week, yep, I tried to edit it every single day of the week and nothing.

A couple weeks ago I start dreaming about this soup, I thought it was perfect for these colder afternoons. This was my second attempt at making it, the first time it wasn't a success, the onions never caramelized, and apparently I forgot to add the flour at the right time, still had good flavor so I decided to try again with the same recipe. This time I followed the recipe to the letter, and before making it I tried to find what was the key to caramelize the onions, all pointed to use a large pot and let the onions caramelize for about 30 minutes, and it was exactly what I did. Everyone loved the soup, it tasted delicious, it gives you that warm sensation, so needed for this season, and makes the house smell amazing. It's also very  easy to make, it takes a little to cut all your ingredients, but everything else is just stir and wait. It's definitely a soup that you can't miss for these autumn days, if you try it, please let me know what you think, and even share some pictures, I'd love to see them!!

Esta si que ha sido una laaaarga semana, no he tenido ni un sólo momento libre y ya espero con ansia que acabe la escuela y poder descansar para tener tiempo libre para hacer las cosas que me gustan. De hecho me da un poco de pena aceptarlo, pero llevo toda la semana tratando de publicar esta deliciosa sopa de cebolla (así de ocupada he estado). 

Hace poco se me antojó muchisimo, y pensé que era perfecta para estas tardesitas un poco frías. Fue mi segunda vez haciendola, la primera no me salió muy bien que digamos, las cebollitas jamás se caramelizaron y al parecer olvidé hecharle la harina en el momento indicado, aún así tuvo buen sabor y por eso decidí intentar de nuevo con la misma receta. Esta vez seguí la receta al pie de la letra y traté de buscar cual era el punto clave para caramelizar las cebollitas, todo indicó que usar una olla con base amplia y dejarlas caramelizar por 30 min era lo mejor, y así lo hicé. Todos amaron la sopa, sabía deliciooooosa, te brinda ese calorsito taaan necesario en esta temporada  y hace que la casa  huela delicioso, además es muy sencilla, lleva un poco de tiempo la preparación pero lo demás es sólo esperar. Sin duda es una sopa que no puede faltar para estos días de otoño, si la hacen no olviden compartir sus comentarios o icluso fotografías, me encantaría verlas!!!

Raspberry Bloom: Onion Soup


Onion Soup
(Slightly adapted from Food Network, Tyler Florence's recipe)

Ingredients 
1 stick unsalted butter
1 pound yellow onions(or white), sliced
2 garlic cloves, chopped
2 bay leaves
2 fresh large thyme sprigs
1 cup red wine, about 1/2 bottle
3 heaping tablespoons all-purpose flour
2 quarts beef broth
salt and ground black pepper to taste
1 baguette, sliced
1/2 pound grated Gruyere, or Swiss cheese, or Manchego cheese.

Directions
1. Melt the stick of butter in a large pot over medium heat. Add the onions, garlic, bay leaves, thyme, and cook until the onions are very soft and caramelized, about 30 minutes, stirring once in awhile.

2. Add the wine, bring to a boil, reduce the heat and simmer until the wine has evaporated and the onions are dry, about 5 minutes.

3. Discard the bay leaves and thyme sprigs. Dust the onions with the flour and give them a stir. Turn the heat down to medium low so the flour doesn't burn, and cook for 10 minutes to cook out the raw flour taste.

4. Now add the beef broth, bring the soup back to a simmer, and cook for 10 minutes. Season, to taste, with salt and pepper.

5. When you're ready to eat, preheat the broiler. Arrange the baguette slices on a baking sheet in a single layer. Sprinkle the slices with the cheese and broil until bubbly and golden brown, 3 to 5 minutes.

6. Ladle the soup in bowls and float several of the cheese croutons on top. Enjoy your soup!!

Alternative method: Ladle the soup into bowls(appropriate for oven), top each with 2 slices of bread and top with cheese. Put the bowls into the oven to toast the bread and melt the cheese, 3 to 5 minutes.

Sopa de Cebolla
(Adaptada de Food Network, receta de Tyler Florence)

Ingredientes
1 barrita de mantequilla sin sal(90 gr) 
4 cebollas amarillas (o blancas), cortadas por la mitad y luejo en medias rodajas
2 dientes de ajo , picados
2 hojas de laurel
2 ramitas largas de tomillo fresco
Sal y pimienta al gusto
1 taza de vino tinto , aproximadamente 1/ 2 botella
3 cucharadas colmadas de harina 
2 litros de caldo de carne
1 baguette en rodajas
1/4 de queso rayado, puede ser Gruyere(de preferencia), suizo o manchego.

Instrucciones
1. Derretir la barra de mantequilla en una olla grande a fuego medio. Añadir la cebolla , el ajo, el laurel , el tomillo, y cocine hasta que la cebolla esté muy suave y caramelizada, unos 30 minutos, moviendo de vez en cuando.

2. Añadir el vino , llevar a ebullición , reduzca el fuego y cocine a fuego lento hasta que el vino se haya evaporado y las cebollas estén secas , unos 5 minutos. 

3. Deseche las hojas de laurel y las ramitas de tomillo, espolvorea la harina y mueva para incorporar. Baje el fuego a medio-bajo para que la harina no se queme , y cocine durante 10 minutos para cocinar el sabor de harina cruda. 

4. Ahora agregue el caldo de carne , llevar la sopa de nuevo a fuego lento y cocine por 10 minutos más. Sazonar al gusto con sal y pimienta.

5. Cuando esté listo para comer , precalentar el horno a 180 °C. Coloque las rebanadas de pan en una bandeja para hornear en una sola capa y espolvoree con el queso rayado, hornear hasta que haga burbujas y el queso este ligeramente dorado,  3 a 5 minutos.

6. Sirva la sopa en platos hondos y colocar las rebanadas con queso en la parte superior.

Método alternativo: Sirva la sopa en platos hondos que sean para hornear, cubre cada uno con 2 rebanadas de pan y cubrir con queso. Poner los platos en el horno para tostar el pan y fundir el queso, de 3 a 5 min.

Autumn Cravings {Complementing}


I  like to make these collages as my source of inspiration, so when I go shopping into my local stores I can look for similar pieces, this makes everything much more easier to me, and on this way I've avoided keep buying things I don't need, and don't like.  Last month I showed you some of my fashion autumn cravings, clothes and shoes, and this time I'll share some of the things I think complement any outfit this season, it's all about adding some details, shades and textures that will spice things up a little.

Let's begin with jewelry, I'll say there are two basics for the season, statement necklaces and dainty rings, these two can make any outfit look effortlessly chic, and there are some really affordable pieces out there, so you don't have to spend a lot to look pretty.

When the temperature begins to drop there's nothing better that beanies, light scarves, and fuzzy socks, into some seasonal shades, fun patterns, and bright colors. I would say that a yellow neon beanie, or a leopard print scarf are a perfect addition to an outfit with neutral, or dark shades. And the same applies with bags, I'm very into seasonal colors, like maroon, emerald, tan, the basic black, and some patterned. I've been really craving one with leopard print.

And finally beauty products, I'm not much a makeup girl, but the two things that I think make you look put together are lipstick and nail polish, lipstick brings a pop of color to your face, and nail polish embellishes your hands and makes them look more feminine, so, basically both make you look more polished.  For the fall-winter time I've been loving berry lips, and nails in blues, reds, purples, and emerald, I specially love adding glitter nail polish into one of my nails to make my mani look a little bit more playful.

Me gusta hacer estos collages como mi fuente de inspiración , así cuando voy de compras a mis tiendas locales puedo encontrar piezas similares , esto hace que todo sea mucho más fácil para mí y de esta forma he evitado seguir comprando cosas que no necesito y no me gustan. El mes pasado comparti algunos de mis "antojos de moda de otoño" , ropa y zapatos , esta vez voy a compartir algunas de las cosas que creo complementan cualquier outfit esta temporada, se trata de añadir algunos detalles, colores y texturas que den un poco de sabor a nuestros looks.

Vamos a comenzar con la joyería , diré que hay dos elementos básicos para la temporada , collares vistosos y anillos delicados, estos dos pueden hacer que cualquier outfit  se vea chic sin tanto esfuerzo, y hay algunas piezas muy asequibles por ahí, así que no tenemos que gastar tanto para vernos líndas.

Cuando la temperatura comienza a descender no hay nada mejor que gorritos, bufandas ligeras y calentadores, en algunos tonos de temporada, diseños divertidos y colores brillantes. Yo diría que un gorro amarillo neón o una bufanda de leopardo son un complemento perfecto para un outfit con tonos neutros  u obscuros. Y lo mismo aplica con las bolsas , me gustan mucho en colores de temporada , como borgoña o vino, esmeralda , canela,la basicá en negro, y algunos otros diseños y patrosnes. He estado deseando una con estampado de leopardo.

Y finalmente los productos de belleza, no soy mucho de  maquillarme, pero las dos cosas que creo que dan el toque final a un outfit son el lápiz labial y el esmalte de uñas, el lápiz labial aporta un toque de color a tu rostro y el esmalte de uñas embellece tus manos y hace que se vean más femeninas,  básicamente el uso de ambos da la idea de que estas "más arreglada". Para la temporada otoño-invierno me ha encantado el lipstick en tonos berry o bayas, y las uñas en tonos azules, rojos, púrpuras y esmeralda, especialmente me gusta añadir esmalte con brillos en una de mis uñas para hacer mi mani un poco más festivo.

Oh, yeah!! We finally went for a pumpkin spice to starbucks, I was going to ask for a latte, but I ended up having a frappuccino, and it definitely stole my heart./ Oh, siiiiiiiiiii! Por fin pudimos ir a starbucks a probar un pumpkin spice, yo iba por el latte pero terminé con el frappuccino y robó mi corazón.

And finally my favorite moment of the month was, dressing up for the first time for a Halloween birthday party. He was a pirate and I was a princess, not really I was trying to be the black swan./
Y mi momento favorito, sin dida fue, disfrazarnos por primera vez para una fiesta de cumpleaños de Halloween. Él es un pirata y yo era una princesa, en realidad no, trataba de ser el "cisne negro" :P

It seems that there was no time to watch movies this month, so there's no movie of the month. But, I would love to hear any recommendation for November./Este mes parece que no hubo tiempo de ver películas, así que se las debo, pero se aceptan recomendaciones para este mes.

This granola made my October mornings extra special, you can have it with yogurt, or with warm milk, with fruit, or fruit and milk, the list goes on and on, is just the perfect quick, and hearty breakfast.

I had wanted to make this granola since autumn began, I thought the flavor would be just perfect for the season. I made some changes from the original recipe, because I had in mind a granola with a strong cinnamon flavor, with some pecans and raisins, a kind of apple strudel flavor (Does that make any sense to you??), so I just changed it up a bit to make my dream granola come true. I hope you try it, is perfect for the fall-winter time, and it would also be a great holiday gift. Leave any comments or questions below...Happy Monday!!

Como les dije, yo amoooo el desayuno, es sin duda, mi comida favorita del día. Esta granola hizo que mis mañanas de octubre fueran extra especiales, puedes comerla con yogurt o con leche calientita, con frutas o frutas y leche, la lista sigue y sigue, es el desayuno perfecto, rápido y delicioso.


Había querido hacer esta granola desde que comenzó el otoño, pensé que el sabor sería perfecto para la temporada. Hice algunos cambios con respecto a la receta original, ya que tenía en mente una granola con un fuerte sabor a canela, con un poco de nueces y pasas, una especie de sabor strudel de manzana (eso tuvo sentido para ustedes?),  así que simplemente la cambié un poco para hacer mi "granola de ensueño" realidad. Espero que la prueben, es perfecta para la época de otoño-invierno, y también sería un regalo perfecto para las fiestas. Deja cualquier comentario o pregunta.... Feliz Lunes!

Raspberry Bloom: Apple Cinnamon Granola


Apple Cinnamon Granola
Makes about 5 cups of granola (adapted from Two peas and their pod)

Ingredients
3 1/2 cups rolled oats (not quick oats)
1/2 cup flax seeds
1/2 cup raisins, chopped
1 cup chopped pecan nuts
1 Tablespoons ground cinnamon, + 1 Tabelspoon after baking
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
3/4 cup applesauce (I used the applesauce from my apple cider recipe)
1 1/2 tablespoons honey
2 Tablespoons brown sugar
1 1/2 tablespoon canola oil
1 teaspoon vanilla extract
4 oz. chopped dried apples

Directions
1. Preheat the oven to 300°F. We're going to use one baking sheet, either greased with cooking spray or covered with parchment paper.

2. In a large bowl, combine oats, flax seeds, raisins, pecans, 1 Tbs cinnamon, nutmeg, and salt, stir to mix well. Set aside.

3. In a small bowl, put applesauce, honey, brown sugar, canola oil, and vanilla, whisk a bit to mix well. Pour the wet ingredients over the dry ingredients, and stir well.

4. Spread the mixture evenly onto the prepared baking sheet. Bake for 45 minutes, or until evenly golden brown. Every ten minutes take out the granola from the oven so you can rotate the baking sheet and give it a good stir, this will help it to cook evenly.

Adding dried apples:
-If you want crunchy apples you must add the dried apples the last 15 minutes of baking, at 30 minutes of baking take your pan out of the oven, and add apples, stir to combine, let it bake for remaining 15 minutes.

-If you prefer soft apple pieces, once the granola is golden brown("after 45 min. of baking") remove the pan from the oven, and stir in the dried apples.

5. Once out of the oven, let the granola rest for 10 minutes, and add the remaining cinnamon(1 Tablespoon), stir to mix well. This will make it smell and taste even better. Let it cool completely.

6. Scoop cooled granola into a jar or other airtight container. Store in the refrigerator indefinitely, besides this will make it easier to use. Or, Keep in a cool, dark place and it will keep for up to one month.

Note:
The granola may still feels slightly soft when it comes out of the oven, but it will crisp as it cools.

Granola Manzana-Canela
Salen 5 tazas de granola aprox. (adaptada de Two peas and their pod)

Ingredientes
3 1/2 tazas de avena (no avena instantánea)
1/2 taza de semillas de linaza
1/2 taza de pasas, picadas
1 taza de nueces picadas
1 cucharada de canela en polvo , + 1 cucharada para después de hornear
1/2 cucharadita de nuez moscada molida
1/2 cucharadita de sal
3/4 taza de puré de manzana (yo usé el puré de manzana que salió de mi receta de sidra de manzana)
1 1/2 cucharadas de miel
2 cucharadas de azúcar morena
1 1/2 cucharada de aceite de canola
1 cucharadita de extracto de vainilla
4 oz. de manzana seca, picadas

Instrucciones
1. Precaliente el horno a 150 °C. Vamos a utilizar una bandeja para hornear, puede estar engrasada con aceite en aerosol o cubierta con papel pergamino o encerado.

2. En un tazón grande, mezcla la avena , semillas de linaza, nueces, pasas, 1 cucharada de canela, nuez moscada y sal , revuelve para mezclar bien. Pon a un lado .

3. En un tazón pequeño, poner la salsa de manzana, miel, azúcar morena, aceite de canola y la vainilla, revolver un poco para mezclar bien. Verter los ingredientes líquidos sobre los ingredientes secos y mezclar bien.

4. Extiende la mezcla uniformemente en la bandeja preparada. Hornee durante 45 minutos o hasta que la granola esté bien dorado. Cada diez minutos sacar la granola del horno para que pueda girar la bandeja y revolver con una pala, esto ayudará a que se cocine uniformemente.

Adición de manzanas secas :
- Si quieres manzanas crujientes se debe agregar la manzana seca en los últimos 15 minutos de cocción, a los 30 minutos de cocción sacar la bandeja del horno y agregar las manzanas, revuelve para mezclar y deja que se hornee los 15 minutos restantes.

- Si prefieres trozos de manzana suave, una vez que la granola se dore ("después de 45 min . en el horno") retira la bandeja del horno y agrega las manzanas secas .

5. Una vez fuera del horno, deja reposar la granola durante 10 minutos y añadir el resto de la canela (1 cucharada), para darle una extra de canela, revuelve para mezclar bien. Esto hará que el olor y el sabor sean aún mejor. Deja que se enfríe por completo.

6. Vacáa la granola en un frasco u otro recipiente hermético. Guarda en el refrigerador indefinidamente, además esto hará que sea más fácil de usar. O Mantenla en un lugar fresco y oscuro, se mantendrá durante un máximo de un mes en buen estado.

Nota :
La granola puede todavía sentirse un poco suave cuando se saque del horno, pero al enfriarse quedará crjiente.
