In Mexico chili isn't very popular, well at least in the center and south part of the country it's not, and I have no idea why, it's something so easy to make, which has few ingredients, and it's more than perfect to warm you up in the fall/winter season.

Two years ago I made chili for the first time, and we absolutely loved it, ever since, every time I see a chili recipe that catches my attention I pin-it right away to try to make it sometime. This recipe immediately caught my attention just for the fact that is made ​​with 5 ingredients, who doesn't love that, besides it's a different version made with chicken and salsa verde, and that's not even the best part, you can use some leftover roasted or poached chicken,  and contains ingredients that you may already have or that are easy to get. To make a long story short, I'll just say this chili is amazing, it was so easy to make, the toppings are the perfect match for it, and it also makes you feel warm and cozy. This recipe will definitely be one of our go-to recipes for the colder months, which are just around the corner, I hope you try it, because I know you're gonna love it. ..... En México el chili con carne no es tan popular, bueno al menos en el centro y sur del país no lo es y no tengo la menor idea de por qué, ya que es algo super rápido de hacer, que lleva pocos ingredientes y es perfecto para la temporada de frío.

Hace dos años hicé chili con carne por primera vez, y lo amamos, desde entonces cada que veo una receta de chili que me llama la atención trato de pinearla para intentar hacerla después. Esta receta llamó mucho mi atención sólo por el hecho de estar hecha con 5 ingredientes, digo a quien no le encanta eso, además es una versión diferente hecha con pollo y salsa verde, lo mejor es que puedes ocupar algunas sobras de pollo rostizado o hervido y que contiene ingredientes que tal vez ya tienes o son muy fáciles de conseguir. Para no hacer el cuento largo, sólo les diré que el chili quedo delicioso, fue super fácil de hacer,  los toppings lo complementaban a la perfección y te hace sentir calor de hogar. Esta receta sin duda será una de las que más hagamos para la temporada de frío que cada vez se acerca más, los invito a probarla, porque se que les encantara.....Feliz fin de semana!!

Raspberry Bloom: 5-ingredient White Chicken Chili


5-Ingredient White Chicken Chili
Serves 4-5, adapted from Gimme Some Oven, which is one of my favorite food blogs :)

Ingredients
5-6 cups chicken broth (depending on your taste, I used 5)
3 cups cooked shredded (or diced) chicken
2 (15-oz) cans white beans(or homemade), drained
2 cups salsa verde (storebought or homemade)
1 tsp. ground cumin
salt and ground pepper, to taste

Toppings(optional):
Diced avocado
Chopped fresh cilantro
shredded cheese, I used manchego
Sour cream
Tortilla chips

Directions
1. Add all the ingredients into a medium saucepan,  shredded chicken, beans, salsa verde, cumin, and chicken broth, 5 cups if you like your chili a little less brothy, stir to combine.

2. Heat over medium-high heat until boiling, then cover and reduce heat to medium-low and simmer for at least 5 minutes. Season with salt and pepper to taste.

3. Serve warm with desired toppings. That's it, a quick and delicious hearty food in less than 20 minutes!!

Chili Blanco con Pollo  (5-Ingredientes) 
Sirve 4-5, adaptado de Gimme Some Oven :)

Ingredientes
5-6 tazas de caldo de pollo (dependiendo de tu gusto, yo usé 5)
3 tazas de pollo cocido desmenuzado o cortado en cubitos
850 grms de frijoles blancos cocidos, escurridos
2 tazas de salsa verde cocida (comprada o hecha en casa)
1 cdta. de comino molido
sal y pimienta molida, al gusto

Toppings (opcional):
Aguacate cortado en cuadritos
Cilantro fresco picado
Queso rallado, yo usé manchego
Crema
Totopos de tortilla

Instrucciones
1. Añadir todos los ingredientes en una cacerola mediana, pollo desmenuzado, frijoles, salsa verde, comino y el caldo de pollo, 5 tazas de caldo si te gusta un poco menos caldoso, revuelve para mezclar.

2. Calienta a fuego medio-alto hasta que hierva, tapar y bajar la temperatura a medio-bajo y cocina a fuego lento durante al menos 5 minutos. Sazona con sal y pimienta al gusto.

3. Sirvelo caliente con los toppings de tu agrado. Eso es todo, una comida rápida, deliciosa y calientita en menos de 20 minutos!
