Happy 2014!!

I just wanted to make a quick post to wish you all a very very Happy New Year, and that all your dreams and wishes come true!!  This year has been amazing and I couldn't be more thankful for it, I've learn so much, I've been happier than ever, and I've loved with all my heart. Thank you so much to every single person that made this the most incredible year of my life, I know next year is going to be even better. 

I also wanted to thank you for visiting my little space on the internet, it really means the world to me that you take some of your time to visit, or leave a comment, or just make one of the recipes I share. God bless you!!

Sólo quería hacer un post rápido para desearles a todos un muy muy feliz Año Nuevo, y también que todos sus sueños y deseos se hagan realidad! Este año ha sido increíble y no podría estar más agradecida por ello, he aprendido mucho, he sido más feliz que nunca y he amado con todo mi corazón. Muchísimas gracias a todas las personas que hicieron de este el año más increíble de mi vida, sé que el próximo año va a ser aún mejor.

Gingerbread Pancakes

As you may already know I looooove breakfast, and one of my absolute favorite things to make are pancakes. We have pancakes pretty much every weekend, and to avoid falling into a routine, or getting sick of the same thing, I love to add fruit, or spices, according to the season.

Last weekend was no exception, and since we're in holiday season I thought there was nothing more appropriate than gingerbread pancakes. These pancakes tasted literally like gingerbread cookies, they're really soft and fluffy, and the maple syrup only enhance the flavor of the spices and molasses. We really loved them, and it was a great way to get into the holiday spirit without all the extra work. I really wanted to share the recipe before the holidays, because I think this is a perfect breakfast for these days, or even a great idea for Christmas' morning breakfast. Well, I hope you enjoy them, and that they bring some joy to your life....Happy weekend!!

Como usted ya saben yo amoooo el desayuno, y una de mis cosas favoritas de hacer son hotcakes. Nosotros comemos hotcakes casi cada fin de semana, y para no caer en la rutina, o hartarnos de la misma cosa, me encanta añadir frutas o especias, de acuerdo a la temporada.

El fin de semana pasado no fue la excepción, y ya que estamos en temporada navideña pensé que no había nada más apropiado que hotcakes de jengibre. Estos hotcakes sabían literalmente, como galletas de jengibre, son muy suaves y esponjosos, y el jarabe de maple sólo mejoran el sabor de las especias y melaza. Realmente nos encantaron, y fue una gran manera de entrar en el espíritu navideño sin todo el trabajo extra. Tenía muchas ganas de compartir la receta antes de las vacaciones, porque creo que este es un perfecto desayuno para estos días, o incluso una gran idea para el desayuno de la mañana de Navidad.  Bueno, espero que les gusten y que traiga un poco de alegría a sus vidas.... Feliz fin de semana!

Nota: En Puebla no es fácil encontrar melaza, así que investigué un poco y su equivalente se puede hacer con piloncillo o panela. Yo hice la mía derritiendo un cono de piloncillo con 3 cucharadas de agua, a fuego medio. Espero les ayude!!

Raspberry Bloom: Gingerbread Pancakes


Gingerbread Pancakes
Makes about 22 small pancakes; serves 5-6.

Ingredients:
2 cups all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground clove
2 Tbs. brown sugar
3 Tbs. unsalted butter, melted and cooled
2 eggs
4 Tbs. molasses
1 1/2- 1 3/4 cups buttermilk
1 tsp. vanilla extract

Plus:
1 to 2 Tbs. butter or nonstick cooking spray for greasing your pan
Maple syrup for serving


Directions
1. Preheat a large skillet on medium heat.

2. Pour all the dry ingredients into a medium sized bowl, minus brown sugar,  flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and clove. Whisk with a fork until well combined.  Set aside.

3. In  a larger bowl pour all the wet ingredients plus the brown sugar, this will help to incorporate sugar faster, melted butter , eggs, molasses, buttermilk, brown sugar, and vanilla. Whisk with a fork until smooth and well combined.

4. Pour dry mix over wet mixture, and stir just until the batter is smooth and almost no lumps remain.

5. Grease your skillet very lightly with butter and pour about 1/4 cup of pancake batter. Cook for about 2 min, or until tiny bubbles start showing up around the edges of your pancakes, flip the pancakes and cook 2 minutes more, or until the bottom looks dark golden brown, because of the molasses. Keep warm until all the pancakes are cooked.

6. Serve with maple syrup, and enjoy!!!!

Hotcakes de Jengibre
Salen aproximadamente 22 hotcakes pequeños, sirve para 5-6 personas .

Ingredientes
2 tazas de harina 
2 cucharaditas de polvo para hornear
1 cucharadita bicarbonato de sodio
1/2 cdta. sal
2 cucharaditas de canela en polvo
1 cucharadita de jengibre molido
1/4 cucharadita de nuez moscada molida
1/4 cucharadita de clavo de olor molido
2 cucharadas  de azúcar morena o mascabado
3 cucharadas de mantequilla, derretida y a temperatura ambiente
2 huevos
4 cucharadas de melaza, o piloncillo/panela líquida
1 1/2 a 1 3/4 tazas de buttermilk, o leche de bulgaros, o 1 1/2 taza de leche + 1 cucharada de jugo de limón sin semilla(del grande), que haya reposado 5 min.
1 cucharaditas de extracto de vainilla

Plus :
1 a 2 cucharadas de mantequilla o aceite en aerosol antiadherente para engrasar el sartén o plancha
Jarabe de maple para servir

Instrucciones
1. Precalienta una sartén grande o plancha a fuego medio.

2. Vierte todos los ingredientes secos en un tazón mediano (menos el azúcar moreno),  harina, polvo para hornear , bicarbonato, sal, canela,  jengibre, nuez moscada y clavo de olor. Batir con un tenedor hasta que estén bien mezclados. Ponlo a un lado .

3. En un tazón grande vierte todos los ingredientes húmedos , más el azúcar moreno , esto le ayudará a incorporar el azúcar más rápido , aceite, huevos, melaza, buttermilk(o alguna de las otras opciones) y extracto de vainilla. Mezclar hasta que todo este bien incorporado.

4. Vierte la mezcla de ingredientes secos sobre la mezcla de ingredientes húmedos, y revuelve hasta que la masa tenga una consistencia lisa y casi no queden grumos .

5. Engrasa el sartén o plancha muy ligeramente con mantequilla y vierte aproximadamente 1/4 de taza de la mezcla de hotcakes. Cocina por unos 2 minutos o hasta que puedas ver  que pequeños agujeros comienzan a salir alrededor de los bordes de los hotcakes, voltea los hotcakes y cocina 2 minutos más , o hasta que la parte inferior se vea de un tono dorado obscuro, por la melaza. Mantenlos calientes hasta que estén cocidos todos los hotcakes.

6 . Servir con jarabe de maple, y disfrutalos! !

Christmas Wishlist

I looove Christmas for so many reasons, food, family time, Christmas lights everywhere, people is happier, and you give and receive presents for no other reason than thank all the love and support that your friend and family gave you throughout the year. I think these presents are just a way to show all your loved ones how much you appreciate them, it can be anything, a store bought present, or a cute homemade or DIY gift, or just intangible things such as friendship and love, which are really the best things that someone can give you, the point is to let them know how special they're for you.

Since Christmas is just a few days away, and that I really love to look at other people's wishlists or gift guides, I thought it'd be a good idea to share my list with you. These are just some things that I'd like to receive, but it really doesn't matter if I receive one of these, or any other gift, or no gift at all, because I already feel really happy and blessed with all the things I have, and all the wonderful people in my life!!

Yo amo la Navidad por muchas razones , la comida, el tiempo en familia, luces de Navidad por todas partes, la gente es más feliz, y das y recibes regalos por ninguna otra razón que agradecer todo el amor y apoyo que tus amigo y familia te brindaron a lo largo del año. Creo que estos regalos son sólo una manera de mostrarle a todos sus seres queridos cuánto los aprecias, puede ser cualquier cosa, algo que compraste en una tienda, o un lindo regalo hecho por tí, o cosas intangibles como la amistad y el amor, que son realmente lo mejor que alguien te puede dar, el punto es sólo hacerles saber lo especiales que son para ti.

Dado que la Navidad está a pocos días de distancia, y a que me encanta ver las listas de deseos y guías de regalos de otras personas, creí que sería una buena idea compartir mí lista de deseos con ustedes. Estas son sólo algunas cosas que me gustaría recibir, pero realmente no importa si recibo uno de estos, o cualquier otro regalo, o ningún regalo en absoluto, porque ya me siento muy feliz y bendecida con todas las cosas que tengo, y todas las maravillosas personas en mi vida!

I'm enjoying so much this holiday season, we've been cooking, eating more than I'd like to admit, doing holiday shopping, making some DIY projects, putting our Christmas decoration, listening to Christmas music, snuggling as much as we can, and having lots and lots of hot coca. This is how things have been lately, and I'm truly having the time of my life. There's no doubt that this is the most wonderful time of the year!

Estoy disfrutando mucho esta temporada de vacaciones, hemos estado cocinando, comiendo más de lo que me gustaría admitir, haciendo compras para las fiestas, haciendo algunos proyectos DIY, poniendo nuestras decoraciones de Navidad, escuchando música de Navidad, acurrucándonos tanto como podemos y tomando montones y montones de coca caliente. Así es como las cosas han sido últimamente, y estoy realmente pasando el mejor momento de mi vida. No hay duda de que ésta es la época más maravillosa del año!

These cookies in particular had a long time on  my to-do list, I was just waiting for the right time to make them, and what better time than Christmas time, right?, besides its ingredients are so holiday season appropriate.

Last week was the right time, and we finally had the chance to taste these delicious cookies, everyone loved them, and I must say they didn't lasted more than 2 days. Thanks to these cookies now I think white chocolate and dried cranberries are a match made in heaven, they smelled and tasted amazing, were crispy on the edges and soft in the middle, I'd say the perfect holiday treat!

These cookies are a great holiday activity to spend time with your loved ones, or just as a gift for all those special people in your life, just remember this is the time to have fun, be merry, and eat cookies.... Wish you a great week!

Estas galletas en particular tenían mucho tiempo en mi lista de cosas por hacer, sólo estaba esperando el momento adecuado para hacerlas, y qué mejor momento que la temporada Navideña, ¿no?, además sus ingredientes son tan apropiados para la temporada.

La semana pasada fue el momento adecuado, y finalmente tuvimos la oportunidad de probar estas deliciosas galletas, todo el mundo las amó y debo decir que no duraron más de 2 días. Gracias a estas galletas ahora creo que el chocolate blanco y los arándanos secos son una pareja hecha en el cielo, olían y sabían increíble, estuvieron crujientes en los bordes y suaves en el medio, yo diría que son el perfecto "gustito" para la temporada!

Estas galletas son una gran actividad navideña para pasar tiempo con sus seres queridos, o simplemente como un regalo para todas aquellas personas especiales en su vida, recuerden que este es el tiempo para divertirse, ser felices y comer galletas .... Les deseo una excelente semana!!

Raspberry Bloom: White Chocolate Cranberry Cookies

White Chocolate Cranberry cookies
Adapted from Food Network

Ingredients
1/2 cup unsalted butter, softened (1 stick)
1/4 cup packed light brown sugar
1/2 cup granulated sugar
1 1/2 tsp vanilla extract
1 large egg
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 + 1/8 tsp salt
1 cup dried cranberries, halved
3/4 cup white chocolate chips or 4 oz. white chocolate chunks

Directions
1. Using an electric mixer with the paddle attachment, cream the butter and both sugars together until smooth, about 5 min. Add the vanilla and egg, mixing well.

2. Meanwhile, in a medium sized bowl pour together flour, baking powder, baking soda, and salt, whisk to combine.

3. Spoon the flour mixture gradually into the creamed sugar mixture, mix until you have a moist and smooth mixture, about 3 minutes or so, do not overbeat.  Stir in the cranberries, and white chocolate, and mix until well combined.

4. Cover dough tightly with plastic wrap, and chill on the fridge for at least 1 hour and up to 2 days.

5.  When you are ready to bake your cookies, preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper, or aluminium foil.

6. Remove cookie dough from the fridge, and drop by heaping spoonfuls, onto the prepared baking sheets, 2 inches apart. Bake for 10-12 min, or until lightly golden on top and the edges are set.

7. Cool on the sheet about 5 minutes, and then transfer to a wire rack to cool completely. Store in an airtight container for up to 2 weeks.

Galletas de Chocolate Blanco y Arándanos

Ingredientes
1/2 taza de mantequilla sin sal, ablandada (1 barra, 113 grms.)
1/4 taza de azúcar morena o mascabado
1/2 taza de azúcar granulada
1 1/2 cucharadita de extracto de vainilla
1 huevo grande
1 1/2 tazas de harina
1 cucharadita de polvo para hornear
1/2 cucharadita de bicarbonato de sodio
1/4 + 1/8 cucharadita de sal
1 taza de arándanos secos, picados en mitades
3/4 taza de chispas de chocolate blanco o 113 grms. de trozos de chocolate blanco

Instrucciones
1. Con una batidora eléctrica con el aditamento de la paleta, acremar la mantequilla y las dos azúcares hasta que quede suave, unos 5 minutos. Después agrega la vainilla y el huevo, mezcla bien .

2. Mientras tanto, en un tazón mediano vierta la harina, el polvo para hornear, el bicarbonato y la sal, mezcla para combinar .

3. Vierte la mezcla de la harina poco a poco en la mezcla de azúcar-mantequilla, mezclar hasta obtener una masa húmeda y suave, unos 3 minutos más o menos, no mezclar de más. Agregar los arándanos y chocolate blanco y mezclar hasta que esté bien combinada.

4. Cubre la masa con papel plástico y refrigera durante al menos 1 hora y hasta 2 días.

5. Cuando haya pasado el tiempo de espera o estes lista para hornear tus galletas, precalienta el horno a 180 grados C. Prepara 2 charolas para hornear con papel encerado o papel aluminio.

6. Retira la masa de galletas del refrigerador y coloca la masa por cucharadas llenas sobre las charola para hornear, más o menos a 5 cm de distancia. Hornea durante 10-12 minutos o hasta que esten ligeramente doradas en la parte superior y los bordes esten firmes

7. Enfriar en la charola  por unos 5 minutos, y luego transferir las galletas a una rejilla para enfriar completamente. Se conservan en un recipiente hermético hasta por 2 semanas.

This is a very simple way to give a twist to our regular sugar, is perfect for this season because its delicious scent will make everything more festive and cozy in the kitchen. I made this especially to use it as an ingredient in a cocoa mix that I'm planning to make next week, which will be part of my Christmas gifts. Besides, I think it'll be perfect to sprinkle on cookies, oatmeal, muffins, crème brûlée, or as a substitute sweetener in coffee, desserts or side dishes (those that include sugar, of course), I could go on and on but I think it's no necessary, probably you already thought in 10 more uses for it. I hope you enjoy it, and I'll share that cocoa mix very soon, so please stay tuned!

Esta es una forma muy sencilla de darle un toque especial al azúcar normal, es perfecta para esta temporada, ya que endulzará y aromatizará todo a cuanto se la heches. Yo en especial pienso usarla en un mix de cocoa que haré la próxima semana, el cual será parte de mis regalos navideños. Además pienso que será perfecta para espolvorear en galletas, avena, muffinscrème brûlée, o como sustituto de endulzante en café, postres o las típicas ensaladas navideñas, podría seguír y seguír pero creo que ya entendieron mi punto. Espero que sea de su agrado y pronto compartiré el mix de cocoa, así que esten pendientes!!

Vanilla Sugar

Ingredients
1 whole vanilla bean
2 cups granulated sugar

Directions
1. Pour sugar into an airtight container

2. Slice down side of bean with the back of a knife, scrape seeds and put into the airtight container with the sugar. Mix with a spoon to combine.

3. Bury bean in sugar and seal tightly with the lid.

4. Let sit for 1 to 2 weeks. Use as regular, granulated sugar!!

Azúcar de Vainilla

Ingredientes
1 vaina de vainilla completa
2 tazas de azúcar granulada

Instrucciones
1. Verter el azúcar en un recipiente hermético

2. Corta la vaina por el costado con el dorso de un cuchillo y raspa las semillas, colocalas en el contenedor hermético con el azúcar. Mezcla con una cuchara.

3. Entiera la vaina en el azúcar y sella el contenedor herméticamente con la tapa.

4. Deja reposar durante 1 a 2 semanas. Usala como azúcar granulado regular.

These cannelloni are a complete and delicious meal. Besides, they have few ingredients, and they're very easy to make, I would say a win-win!

I adapted some of the ingredients to their equivalent in Mexico (according to me), as they are a bit more affordable and easy to get. I replaced parmesan cheese with cotija, and ricotta with requesón, because according to what I´ve read, the ingredients, production method, and consistency are very similar. But if you want you can totally use ricotta and Parmesan.

With this we welcome the start of the carbohydrates season (aka holiday season). I hope you enjoy these a lot, and please don't forget to share your comments!

Estos canelones son una comida bastante completa y deliciosa, son ligeros, pero te dejan bastante satisfecho. Además tienen pocos ingredientes y h
acerlos es muy sencillo, yo diría un win-win!!

Adapté algunos ingredientes de la receta a su equivalente en México(según yo), ya que son un poco más económicos. Sustituí el parmesano por cotija y el ricotta por requesón, ya que de acuerdo a lo que he leído, los ingredientes, elaboración y consistencia son muy parecidos. Pero si ustedes desean pueden usar ricotta y parmesano.

Con esto le damos la bienvenida al inicio de la temporada de los carbohidratos (a.k.a temporada de fiestas). Espero que los disfruten mucho, no olviden compartir sus comentarios!!

Spinach and Cheese Cannelloni
Adapted from Manu's menu. Serves 4-5

Ingredients
1 (8 oz.) cannelloni package (or lasagna sheets)
1 Tbs olive oil
1 lb spinach (raw to be cleaned)
1/2 medium sized onion, sliced
1 2/3 cups requesón  (or ricotta)
2 cups cotija cheese, finely grated, divided (or parmesan cheese)
1 tsp salt, or to taste
1/2 tsp ground pepper, or to taste
1 large egg
2 1/2 cups Béchamel sauce

Ingredients
3 Tbs butter
3 Tbs all-purpose flour
2 1/2 cups milk, warmed
3/4 teaspoons salt
1/4 teaspoon freshly grated nutmeg

Directions 

For the sauce
1. In a medium saucepan, heat the butter over medium-low heat until melted. Add the flour and stir until smooth. Over medium heat, cook until the mixture turns a light, golden sandy color, about 6 to 7 minutes.

2. Meanwhile, heat the milk in a separate pan, until just about to boil.  Add the hot milk to the butter mixture 1 cup at a time, whisking continuously until very smooth. Bring to a boil. Cook 10 minutes, stirring constantly, then remove from heat.

3. Season with salt and nutmeg, and set aside until ready to use.

For the filling
1. Clean, wash, and dry the spinach.

2. In a large saucepan heat olive oil over medium-heat, add sliced onion, saute until light golden brown. Then add spinach, and cook for about 5 minutes, or until it has softened. Remove from heat, and let them cool to room temperature.

3. Meanwhile, put the requesón (or ricotta) in a large bowl, add the egg, 1½ cups of grated cotija (or Parmigiano), and whisk to combine. Set aside.

4. Cut the spinach finely with a knife. Add the minced spinach to the cheese mixture, season with salt and pepper (to taste), mix until well combined. Refrigerate until ready to use.

To assemble
1. Preheat oven according to your cannelloni package. Mine said 350 ° F.

2. Take a 9" x 13" oven dish, and pour some béchamel sauce on the bottom. Spread it well, especially in the corners. Set aside.

3. Pour the filling into a clean plastic bag, and cut one of the bottom corners(you can also use a pastry bag). Grab one cannelloni(raw) at a time, and fill it. Put the cannelloni in the oven dish on 1 layer. I got 21 well filled cannelloni.

4. Cover the cannelloni with the remaining béchamel sauce and sprinkle with the remaining ½ cup cotija (or Parmigiano).

5. Bake them in the preheated oven, again, according to your package instructions. Mine said 30 minutes,  until golden and bubbling. Then broil (grill) them at 400 °F for another 5 minutes (optional).

6. Serve immediately!!

Note:
One last thing, these are better the day they're made, otherwise they'll absorb the liquid in the sauce, and they'll become softer.

Canelones de espinaca y queso
Adaptado de Manu's menu. Sirve 4-5 porciones

Ingredientes
1 (250 grms.) Paquete de canelones (o hojas de lasaña )
1 cucharada de aceite de oliva
900 grms de espinaca (cruda para ser limpiado )
1/2 cebolla  de tamaño mediano, rebanada
1 2/3 tazas de requesón (que es un equivalente del ricotta )
2 tazas de queso Cotija , finamente rallado , dividido  (se puede sustituir con queso parmesano )
1 cucharadita de sal, o al gusto
1/2 cucharadita de pimienta molida, o al gusto
1 huevo grande
2 1/2 tazas de salsa béchamel

Béchamel

Ingredientes
3 cucharadas de mantequilla
3 cucharadas de harina 
2 1/2 tazas de leche, caliente
3/4 de cucharadita de sal
1/4 cucharadita de nuez moscada recién rallada

Para la salsa
1. En una cacerola mediana , calienta la mantequilla a fuego medio-bajo hasta que se derrita . Añadir la harina y revuelver hasta que esté suave. A fuego medio , cocina hasta que la mezcla se vuelva de un color claro, o como arena dorada , unos 6 a 7 minutos.

2. Mientras tanto, calienta la leche en otro sartén casi que hierva, pero no. Añadir la leche caliente una taza a vez a la mezcla de mantequilla, batiendo constantemente hasta que la mezcla esté muy suave. Llevar a ebullición . Cocina por 10 minutos, revolviendo constantemente . A continuación, retirar del fuego .

3. Sazonar con sal y nuez moscada, dejar a un lado hasta que se vaya a utilizar.

Para el relleno
1. Limpiar , lavar y secar las espinacas.

2. En una olla grande calentar el aceite de oliva a fuego medio - , añadir la cebolla en rodajas, saltear hasta que estén ligeramente doradas. A continuación, añadir las espinacas y cocinar durante unos 5 minutos, o hasta que esten blandas. Retirar del fuego y dejar que enfriar, a temperatura ambiente .

3. Mientras tanto, poner el requesón (o ricotta ) en un tazón grande, agreguar el huevo, 1 ½ tazas de Cotija rallado (o parmesano ), y batir para combinar . Ponlo a un lado .

4. Ahora corta las espinacas finamente con un cuchillo. Agrega las espinacas picadas a la mezcla de queso, sazona con sal y pimienta (al gusto ), y mezcla hasta que esté bien combinada. Refrigere hasta que esté listo para usar.

Para ensamblar
1. Precalienta el horno de acuerdo a lo que tu paquete de canelones diga. El mío decía 180 ° C.

2. Toma un molde para hornear de 9 "x 13 "  y unta un poco de la salsa bechamel en el fondo. Distribuyelo muy bien, sobre todo en las esquinas. Ponlo a un lado .

3. Pon el relleno en una bolsa de plástico limpia, y corta una de las esquinas inferiores (también puedes usar una manga pastelera). LLena un canelon(crudo) a la vez. Acomoda los canelones en el 1 sola capa en el molde para hornear. A mí me salieron 21 canelones bien rellenitos.

4. Cubre los canelones con la salsa bechamel restante y espolvorea con la ½ taza restante de Cotija (o Parmigiano ).

5. Hornear en el horno precalentado , de nuevo , de acuerdo a las instrucciones del paquete. El mío decía 30 minutos, o hasta que todo tenga un color dorado y la salsa burbujee. Colocar en la parte de la estufa(broiler) donde se pueda gratinar el queso, a 200 ° C durante otros 5 minutos (opcional).

6 . Sirva de inmediato !

Nota:
Una última cosa, es mejor consumirlos el dia en que se hacen, porque la pasta tiende a absorber el liquido en la salsa y esto los hace muy blandos.

Christmas Playlist

Since the holiday season is just around the corner, I thought it'd be a great idea to share some of my current favorite Christmas songs with you (I'm just to excited about Christmas this year, and I may or may not started listening to these songs in early November, or decorating, or drinking hot cocoa, I'm just saying!!). I love to play these songs, specially while I'm baking, or when I work on my blog, or just when I'm getting ready, it just gets me in such a good and festive mood, particularly when I hear "It's the Most Wonderful Time of the Year", by Andy Williams.

Even Though I love Christmas music I must admit I don't have any Christmas records, yet, but I'm really looking forward to own one, my top three choices would be Michael Bublé ChristmasA Very She & Him Christmas, and Navidades by Luis Miguel. I think any of these would be such a perfect Christmas gift, at least to me!!

What about you, do you have any favorite Christmas songs??

Ya que la temporada navideña está a la vuelta de la esquina, pensé que sería una gran idea compartir algunas de mis canciones favoritas de Navidad con usted (estoy demasiado entusiasmada con la Navidad este año, y puede o no que haya comenzado a escuchar estas canciones a principios de noviembre, o a decorar, o a beber chocolate caliente, sólo digo!). Me encanta escuchar estas canciones, especialmente mientras preparo algo que va a hornearse, o cuando trabajo en mi blog, o simplemente cuando me estoy arreglando, de verdad me pone en mood feliz y festivo, particularmente cuando escucho "It's the Most Wonderful Time of the Year", by Andy Williams.

Aunque me encanta la música de Navidad, debo admitir que no tengo ningún albúm navideño, todavía, pero tengo muchas ganas de uno, mis tres opciones principales serían Michael Bublé ChristmasA Very She & Him Christmas, y Navidades de Luis Miguel. Yo creo que alguno de estos sería un regalo perfecto para Navidad, al menos para mí!

Apple Cider Float

Two years ago I discovered the existence of apple cider, and since then it has become a staple of the autumn season to me, we've use it in pancakes, doughnuts, and a few baked goods, but our favorite way to have some is in apple cider floats, there's something about vanilla ice cream that makes this out of this world. The flavors blend perfectly to make a tasty and cozy treat, that satisfy any sweet craving.

We use our homemade apple cider, that has lots of spices, and we absolutely loved it. This is so easy to make, has very few ingredients, you can serve it warm or cold (I must admit we like it better cold, it enhance the spiced flavor), and make as many servings as you want. I warn you, this is pretty addictive!!

Hace dos años descubrí la existencia de la sidra de manzana estilo americana, y desde entonces se ha convertido en un elemento básico de la temporada de otoño a mí. La hemos utilizado en hotcakes, donas y algunas cosillas horneadas, pero nuestra forma favorita de tomar un poco es en flotantes de sidra de manzana, hay algo acerca del helado de vainilla que lo hacen  fuera de este mundo. Los sabores se mezclan perfectamente para hacer una bebida sabrosa y acogedora, que satisface cualquier antojo dulce.

Utilizamos nuestra sidra de manzana hecha en casa, que tiene muchas especias, y nos encantó. Esto es tan fácil de hacer, tiene muy pocos ingredientes, se puede servir caliente o frío (debo admitir que nos gusta más frío, realza el sabor de las especias), y hacer tantas porciones como quieras. Te lo advierto, esto es bastante adictivo!

Apple cider float 
Adapted from Every day with Rachael Ray. Serves one.

Ingredients
1 cup homemade apple cider
1 cup vanilla ice cream
Caramel sauce, to taste
a pinch of ground nutmeg

Instructions

Warm: 
1. In small saucepan, heat up the cider, as warm as you want.

2. Pour cider into one float glass, mug or jar. Top with ice cream, caramel sauce and a pinch of nutmeg.

3. Serve with spoon.

Cold:
1. Pour chilled apple cider into one float glass, mug or jar. Top with ice cream, caramel sauce and a pinch of nutmeg.

2. Serve cold!

Flotante de Sidra de Manzana
Adaptada de Every day with Rachael Ray. Sirve uno.

Ingredientes
1 taza de  sidra de manzana casera
1 taza de helado de vainilla
salsa de caramelo, al gusto
una pizca de nuez moscada molida

Instrucciones

caliente:
1. En una cacerola pequeña, calienta un poco la sidra.

2. Vierta la sidra en un vaso de vidrio alto, una taza o un tarro. Cubre con helado, salsa de caramelo y una pizca de nuez moscada.

3. Sirva con cuchara.

frío:
1. Vierta la sidra de manzana fría en un vaso de vidrio alto, una taza o un tarro. Cubre con helado, salsa de caramelo y una pizca de nuez moscada.

2. Servir frío!

My favorite moment of the month was to go with Nadi for a cup of coffee, and just talk. I love her!!/Mi momento favorito del mes fue ir con Nadi por una taza de café, y sólo hablar. Yo la amo!

Favorite song: Arctic Monkeys - Snap Out of It (Acoustic). This song is absolutley amazing, I've listen to the original version, but the acustic version is way better, it has a slightly softer rhythm, and I just simply love that!!/ Esta canción es absolutamente increíble, he escuchado la versión original, pero la versión acústica es mucho mejor, tiene un rítmo un poco más suave, y eso simplemente me encanta!!

Movie of the month: It definitely has to be "The Hunger Games: Catching Fire". I looove this movie, I'll just say I cried when Katniss couldn't say goodbye to her little sister!! that moment was so touching. Leave in the comments which was your favorite scene.Me encaaaanta esta película, sólo voy a decir que lloré cuando Katniss no pudo despedirse de su hermana pequeña! ese momento fue muy conmovedor. Deja en los comentarios, cual fue tu escena favorita.

We had an awesome month, we put up our christmas decorations, made lots of yummy food, snuggle pretty much every weekend, watched all of our favorite tv series, and made some DIY projects for the holidays, I couldn't be happier. These were my fave things/moments of the month, I'd love to hear yours!!

Tuvimos un mes increíble, pusimos nuestras decoraciones de Navidad, hicimos un muchas cositas ricas de comer, nos acurrucamos casi cada fin de semana, vimos todas nuestras series favoritas, e hicimos algunos proyectos DIY para la temporada navideña, no podría estar más feliz. Estas fueron mis cosas / momentos  favoritos del mes, me encantaría escuchar las suyas!!

Sweet Potato Pie

School is finally over, and my way to celebrating the beginning of my holidays was with this delicious sweet potato pie, it's certainly one of our favorites, well, actually which isn't our favorite!!

This is the second year I make this pie, this time I made some changes to the recipe, and we liked it even more than last year, so I wanted to share it with all of you. This pie has a rich autumnal flavor, the sweet potato filling blends perfectly with the evaporated milk and all the spices, it tastes and smells simply amazing. It's a perfect treat for the holiday season, which is already in full bloom pretty much everywhere, is very easy to make and it's a different flavor that not many have tasted,  you can take it to a party,  or just make it for your family and enjoy it along with a rich cup of coffee (oh, my....I want pie, again!), everyone is going to love it. I hope you enjoy your pie, and if you have any comments, I'd love to hear them!

La escuela terminó hace algunos días  y mi forma de celebrar el inicio de las vacaciones fue con este delicioso pie de camote amarillo, sin duda es de nuestros favoritos, bueno, en realidad que pie no es de nuestros favoritos.

Este es el segundo año que hacemos este pie, esta vez hicé algunos cambios en la receta y nos gusto muchiiiisimo más que el del año pasado, así que quería compartirlo con todos. Este pie tiene un sabor muy especial, el relleno de camote amarillo que en si ya es dulce queda perfecto con la leche evaporada y las aromaticas especias, simplemente sabe y huele increíble. Es perfecto para la temporada de fiestas que ya se siente en todos lados, es un sabor diferente que no muchos han probado y es muy sencillo de hacer, puedes llevarlo a alguna fiesta, o simplemente hacerlo para tu familia y disfrutarlo con una rica taza de café( ya se me antojo, otra vez!).  Espero que disfruten mucho de su Pie, y si tienen algun comentario me encantaría escucharlo!!

Nota: El camote amarillo esta en temporada y es un poco más fácil de conseguir, yo lo he encontrado en wal-mart o en la Central, por si querían saber :P

Sweet Potato Pie
(Adapted from Laura's sweet spot , author: Sara Foster)

Ingredients
2 pounds baked sweet potatoes, mashed
1 cup evaporated milk
1 tsp vanilla extract
3 large eggs, lightly beaten
3/4 cup brown sugar
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/8 tsp ground cloves
1/4 tsp salt
1 9-inch unbaked single pie crust

For serve:
Whipped cream, sweetened to your taste

Instructions

For the sweet potato puree:
1. Preheat oven to 375°F. Line a baking sheet with foil paper.

2. Wash and thoroughly dry your sweet potatoes. Prick them several times with a fork, and cut them in half. Place them in the prepared baking sheet; bake 45 to 60 minutes, until tender. Let them cool until room temperature.

3. Peel when cool enough to handle, place in a large bowl to puree, use an immersion blender or a food processor, and blend until reach desired consistency. Set aside.

For the Pie:
1. Preheat oven to 350°F.

2. In a large bowl, combine puree sweet potatoes, evaporated milk, vanilla extract and eggs, whisk to blend.

3. In a small bowl, combine brown sugar, cinnamon, ginger, nutmeg, cloves, and salt. Add the sugar mixture to the sweet potato mixture and stir until smooth and well blended.

4. Pour the mixture in the pie crust and bake for 50 to 60 minutes, or until a toothpick inserted in the center of the pie comes out clean (don't use a knife, this may cause a big hole into your pie). Transfer the pie to a wire rack and cool completely.

4.  Once cooled you can serve it right away, or you can put it in the fridge for a couple hours before serving, we like it better this way. Serve slices with a dollop of whipped cream, and enjoy!!

Pie de Camote

Ingredientes
900 grms. de camote amarillo horneado, hecho puré
1 taza de leche evaporada
1 cucharadita de extracto de vainilla 
3 huevos grandes, ligeramente batidos
3/4 taza de azúcar morena o mascabado
1 cucharadita de canela en polvo
1/2 cucharadita de jengibre molido
1/4 cucharadita de nuez moscada molida
1/8 cucharadita de clavo de olor molido
1/4 cucharadita de sal
1 costra para pie sin hornear de 9 pulgadas/22 cm

Para servir:
Crema batida, endulzada al gusto

Instrucciones

Para el Puré de Camote:
1 . Precalienta el horno a 375 ° F. Cubre una bandeja para hornear con papel de aluminio.

2 . Lava y seca los camotes amarillos. Pincha varias veces con un tenedor y cortarlos por la mitad. Colocalos en la bandeja para hornear preparada y horna de 45 a 60 minutos, hasta que estén tiernos. Deja enfriar hasta temperatura ambiente.

3 . Pela los camotes cuando puedan manipularse, coloca en un tazón grande para hacer puré, utiliza una batidora de inmersión o un procesador de alimentos y mezcle hasta lograr la consistencia deseada. Pon a un lado .

Para el Pie :
1 . Precalienta el horno a 190 ° C.

2 . En un tazón grande,  mezcla el puré de camote amarillo, leche evaporada , extracto de vainilla y los huevos, batir para mezclar.

3 . En otro tazón pequeño, combina el azúcar morena , la canela , el jengibre , la nuez moscada , el clavo y la sal. Añadir la mezcla de azúcar a la mezcla de camote y revuelve hasta que esté suave y bien mezclado.

4 . Vierta la mezcla en la costra para pie y hornear durante 50 a 60 minutos, o hasta que un palillo insertado en el centro del pastel salga limpio (no utilizar un cuchillo, esto puede causar un gran agujero en su pie). Transfiere el pie a una rejilla y deja enfriar completamente .

4 . Una vez frío se puede servir de inmediato, o puedes ponerlo en el refrigerador durante un par de horas antes de servir, nos gusta más así. Sirva las rebanadas con una cucharada de crema batida , y a disfrutar !
