School is finally over, and my way to celebrating the beginning of my holidays was with this delicious sweet potato pie, it's certainly one of our favorites, well, actually which isn't our favorite!!

This is the second year I make this pie, this time I made some changes to the recipe, and we liked it even more than last year, so I wanted to share it with all of you. This pie has a rich autumnal flavor, the sweet potato filling blends perfectly with the evaporated milk and all the spices, it tastes and smells simply amazing. It's a perfect treat for the holiday season, which is already in full bloom pretty much everywhere, is very easy to make and it's a different flavor that not many have tasted,  you can take it to a party,  or just make it for your family and enjoy it along with a rich cup of coffee (oh, my....I want pie, again!), everyone is going to love it. La escuela terminó hace algunos días  y mi forma de celebrar el inicio de las vacaciones fue con este delicioso pie de camote amarillo, sin duda es de nuestros favoritos, bueno, en realidad que pie no es de nuestros favoritos.

Este es el segundo año que hacemos este pie, esta vez hicé algunos cambios en la receta y nos gusto muchiiiisimo más que el del año pasado, así que quería compartirlo con todos. Este pie tiene un sabor muy especial, el relleno de camote amarillo que en si ya es dulce queda perfecto con la leche evaporada y las aromaticas especias, simplemente sabe y huele increíble. Es perfecto para la temporada de fiestas que ya se siente en todos lados, es un sabor diferente que no muchos han probado y es muy sencillo de hacer, puedes llevarlo a alguna fiesta, o simplemente hacerlo para tu familia y disfrutarlo con una rica taza de café( ya se me antojo, otra vez!).  Espero que disfruten mucho de su Pie, y si tienen algun comentario me encantaría escucharlo!!

Nota: El camote amarillo esta en temporada y es un poco más fácil de conseguir, yo lo he encontrado en wal-mart o en la Central, por si querían saber :P

Sweet Potato Pie

Ingredients
2 pounds baked sweet potatoes, mashed
1 cup evaporated milk
1 tsp vanilla extract
3 large eggs, lightly beaten
3/4 cup brown sugar
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/8 tsp ground cloves
1/4 tsp salt
1 9-inch unbaked single pie crust

For serve:
Whipped cream, sweetened to your taste

Instructions

For the sweet potato puree:
1. Preheat oven to 375°F. Line a baking sheet with foil paper.

2. Wash and thoroughly dry your sweet potatoes. Prick them several times with a fork, and cut them in half. Place them in the prepared baking sheet; bake 45 to 60 minutes, until tender. Let them cool until room temperature.

3. Peel when cool enough to handle, place in a large bowl to puree, use an immersion blender or a food processor, and blend until reach desired consistency. Set aside.

For the Pie:
1. Preheat oven to 350°F.

2. In a large bowl, combine puree sweet potatoes, evaporated milk, vanilla extract and eggs, whisk to blend.

3. In a small bowl, combine brown sugar, cinnamon, ginger, nutmeg, cloves, and salt. Add the sugar mixture to the sweet potato mixture and stir until smooth and well blended.

4. Pour the mixture in the pie crust and bake for 50 to 60 minutes, or until a toothpick inserted in the center of the pie comes out clean (don't use a knife, this may cause a big hole into your pie). Transfer the pie to a wire rack and cool completely.

4.  Once cooled you can serve it right away, or you can put it in the fridge for a couple hours before serving, we like it better this way. Serve slices with a dollop of whipped cream, and enjoy!!

Pie de Camote

Ingredientes
900 grms. de camote amarillo horneado, hecho puré
1 taza de leche evaporada
1 cucharadita de extracto de vainilla 
3 huevos grandes, ligeramente batidos
3/4 taza de azúcar morena o mascabado
1 cucharadita de canela en polvo
1/2 cucharadita de jengibre molido
1/4 cucharadita de nuez moscada molida
1/8 cucharadita de clavo de olor molido
1/4 cucharadita de sal
1 costra para pie sin hornear de 9 pulgadas/22 cm

Para servir:
Crema batida, endulzada al gusto

Instrucciones

Para el Puré de Camote:
1 . Precalienta el horno a 375 ° F. Cubre una bandeja para hornear con papel de aluminio.

2 . Lava y seca los camotes amarillos. Pincha varias veces con un tenedor y cortarlos por la mitad. Colocalos en la bandeja para hornear preparada y horna de 45 a 60 minutos, hasta que estén tiernos. Deja enfriar hasta temperatura ambiente.

3 . Pela los camotes cuando puedan manipularse, coloca en un tazón grande para hacer puré, utiliza una batidora de inmersión o un procesador de alimentos y mezcle hasta lograr la consistencia deseada. Pon a un lado .

Para el Pie :
1 . Precalienta el horno a 190 ° C.

2 . En un tazón grande,  mezcla el puré de camote amarillo, leche evaporada , extracto de vainilla y los huevos, batir para mezclar.

3 . En otro tazón pequeño, combina el azúcar morena , la canela , el jengibre , la nuez moscada , el clavo y la sal. Añadir la mezcla de azúcar a la mezcla de camote y revuelve hasta que esté suave y bien mezclado.

4 . Vierta la mezcla en la costra para pie y hornear durante 50 a 60 minutos, o hasta que un palillo insertado en el centro del pastel salga limpio (no utilizar un cuchillo, esto puede causar un gran agujero en su pie). Transfiere el pie a una rejilla y deja enfriar completamente .

4 . Una vez frío se puede servir de inmediato, o puedes ponerlo en el refrigerador durante un par de horas antes de servir, nos gusta más así. Sirva las rebanadas con una cucharada de crema batida , y a disfrutar !

    1. Sí, sabe increíble, es como el dulce de camote con lechera, pero en un pie....jajajja
